Beef on a Stick

Combine ingredients. Soak wooden skewers in water
- 1/2 cup soy sauce
- 1/4 cup oil
- 2 Tbl molasses
- 2 tsp ground ginger
- 2 tsp mustard
- 6 cloves garlic, minced
- 1 london broil, sliced

Wolfgang Puck's Special Spaghetti and Meatballs

Wolfgang Puck says his version of this Italian staple is special because the meatballs are especially flavorful
- 4 tablespoons unsalted butter (1/2 stick)
- 1 medium onion, peeled and finely chopped
- 3 garlic cloves, peeled and minced
- 4 slices Italian bread, crusts discarded, cut into small dice
- 1/4 cup whole milk
- 2 pounds lean ground veal
- 1 large egg, lightly beaten
- 1/4 cup Parmesan cheese (freshly grated)
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil leaves, chopped
- 1 teaspoon fresh thyme leaves, chopped
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 5 cups My Favorite Tomato Sauce (recipe below)
- 1 pound dry spaghetti (or several Italian hoagies)
- Fresh flat-leaf parsley, chopped, for garnish
- Freshly ground Parmesan cheese, for garnish
Shrimp Pad Thai

1.Cook noodles according to package directions; drain
- 8 ounces uncooked flat rice noodles (pad Thai noodles)
- 2 tablespoons dark brown sugar
- 2 tablespoons lower-sodium soy sauce
- 1 1/2 tablespoons fish sauce
- 1 1/2 tablespoons fresh lime juice
- 1 tablespoon Sriracha or chili garlic sauce
- 3 tablespoons canola oil
- 1 cup green onion pieces
- 8 ounces peeled and deveined large shrimp
- 5 garlic cloves, minced
- 1 cup fresh bean sprouts
- 1/4 cup chopped unsalted dry-roasted peanuts
- 3 tablespoons thinly sliced fresh basil
Slow Cooker Meatballs

Once shaped, bake at 425 degrees for 15-20 minutes, then simmer slowly in a rich tomato sauce for 1-2 hrs
- 1 pound ground beef
- 1 pound ground pork
- 1/3 plain bread crumbs
- 1/2 cup milk (can substitute water or beef broth)
- 1 diced onion
- 2 tbl olive oil
- 3 cloves crushed garlic
- 2 eggs
- 1/4 bunch fresh parsley
- 2 tbl grated parmesan cheese
- 2 teaspoon salt
- 1 tsp black pepper
- 1/2 tsp red cayenne pepper
- 1 tsp dried Italian herb mix (basil, rosemary, thyme, marjoram, etc.)
Whole Wheat Buttermilk Pancakes

Mix flour, sugar, salt, baking powder, and baking soda in a medium bowl
- 1/2 c. flour
- 1/2 c. whole wheat flour
- 2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 large egg, separated
- 3/4 cup buttermilk
- 1/4 cup milk, plus 1 Tbsp
- 2 Tbsp butter, melted
Chef John's Italian Meatballs

Cover a baking sheet with foil and spray lightly with cooking spray
- 1/3 cup plain bread crumbs
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground beef
- 1 pound ground pork
- 2 eggs
- 1/4 bunch fresh parsley, chopped
- 3 cloves garlic, crushed
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried Italian herb seasoning
- 2 tablespoons grated Parmesan cheese
Chicken Saltimbocca

Pound chicken breasts with the flat side of a meat hammer
- 4 boneless chicken breasts
- 4 slices of prosciutto
- 4 slices provolone cheese
- 1 lb. sliced mushrooms
- 1 bag of baby spinach
- 1/4 cup white wine
- 1 can (14.5 oz.) chicken stock
- 4 tbsp. unsalted butter
- 2 tbsp. flour
- splash of heavy cream or half and half
- pinch of ground sage
- pinch of black pepper
- Olive oil to saute spinach and chicken
Blender Hollandaise Sauce

In a blender, combine the egg yolks, salt, pepper and 1 tablespoon of the lemon juice
- 3 egg yolks
- 1/4 tsp salt
- pinch black pepper
- 1 to 2 Tbsp lemon juice
- 1 stick butter, cut into small pieces
Spinach Tomato Tortellini

Bring a large pot of water to a boil
- 1 (16 ounce) package cheese tortellini
- 1 (14.5 ounce) can diced tomatoes with garlic and onion
- 1 cup chopped fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoons dried basil
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 3/4 cup milk
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
Linguini with Clam Sauce

Bring a large pot of water to a boil
- 1 pound linguini
- Salt
- 1/4 cup extra-virgin olive oil, 4 turns of the pan
- 6 fillets flat anchovies, chopped
- 4 cloves garlic, chopped
- 1 teaspoon dried thyme leaves
- 1/2 to 1 teaspoon crushed red pepper flakes
- 1/2 cup dry white wine, 2 turns of pan
- 1 (15-ounce) can whole baby clams, with their juice
- Handful flat-leaf parsley, chopped
