Basic Chicken Stock

In a large stock pot, over high heat, add the oil
- 1 Tbsp olive oil
- 1 large onion, peeled and quartered
- 1 carrot, peeled and chopped
- 2 celery stalks, chopped
- 1 head of garlic, cut in half
- 1 bouquet garni
- 2 pounds raw chicken bones, rinsed in cold water
- 4 quarts cold water
- salt and pepper
Mexican Lasagna

Preheat a large skillet over medium high heat
- 3 tablespoon olive oil
- 1 1/4 pounds chicken -- or ground turkey
- 1 package taco season mix
- 1/2 red onion, chopped
- 1 package low carb tortillas -- (10 count)
- 2 1/2 cups shredded Cheddar or shredded pepper jack
- 1 can black olives -- sliced (optional)
- 1 (15-ounce) can black beans, drained
- 1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire
- 2 scallions, finely chopped
Grilled Chicken

To prepare chicken, combine the juice, soy sauce, ginger, lemon pepper, and garlic in a large zip-top plastic bag
- 1/2 cup fresh lemon juice (about 4 lemons)
- 1/2 cup low-sodium soy sauce
- 1 tablespoon minced peeled fresh ginger
- 1 tablespoon lemon pepper
- 2 garlic cloves, minced
- 6 (6-ounce) skinless, boneless chicken breast halves
- Cooking spray
Slow Cooker Baby Back Ribs

Line a large baking pan (with sides) with foil and spray with nonstick cooking spray
- Sauce:
- 2 racks of baby back pork spareribs
- salt and pepper
- 3/4 cup ketchup
- 1 TBL dijon mustard
- 2 TBL worcestershire sauce
- 3 TBL packed brown sugar
- 1 clove garlic, minced
- 1/4 tsp celery seed
Whipped Cream

Place a metal bowl and whisk in the freezer for about 10 minutes
- 1 pint heavy cream
- 1/4 cup confectioners' sugar
- 1 Tbl vanilla extract
Sausage-Stuffed Mushrooms

Preheat the oven to 325 degrees F
- 16 extra-large white mushrooms
- 5 tablespoons good olive oil, divided
- 2 1/2 tablespoons Marsala wine or medium sherry
- 3/4 pound sweet Italian sausage, removed from the casings
- 6 scallions, white and green parts, minced
- 2 garlic cloves minced
- 2/3 cup panko crumbs
- 5 ounces mascarpone cheese, preferably from Italy
- 1/3 cup freshly grated Parmesan
- 2 1/2 tablespoons minced fresh parsley leaves
- Salt and freshly ground black pepper
Nachos

Heat the oven to 350 F. In a large saute pan over medium-high, heat the oil
- 2 Tbsp oil
- 1 medium onion, diced
- 6 cloves garlic
- 1 lb ground beef
- 1 tsp paprika
- 1 tsp chili powder
- 2 tsp dried oregano
- 14 -oz can black beans
- 1 -lb bag tortilla chips
- 3 cups shredded mexican-blend cheese
- 6 scallions, chopped
- 3 medium tomatoes, cored and diced
- 15 -oz can pitted black olives, sliced
Indoor S'Mores

Grease 13 x 9-inch baking pan
- 6 cups miniature marshmallows
- 1 1/2 cups milk chocolate chips
- 5 Tbsp butter
- 1 tsp vanilla
- 8 cups golden grahams cereal
Turkey Taco Lettuce Wraps

Heat a large skillet on medium-high heat and add 4 teaspoons of oil
- Accompaniments:
- 6 teaspoons Canola Oil
- 1.25 pounds Ground Turkey
- 1 small Sweet Yellow Onion; diced (about 1 1/2 cups or use regular Yellow Onion)
- 1 1/4 cups Frozen Corn Kernels
- 1 cup canned Seasoned Black Beans; drained
- 1 cup Fat-Free Mild Salsa
- 1/2 cup Reduced-Sodium Chicken Broth
- 1 tablespoon + 1 teaspoon Reduced-Sodium Soy Sauce
- 1 teaspoon Chili Powder
- 1 teaspoon Ground Cumin
- Freshly Ground Black Pepper
- 12 Whole Leaf Lettuce Cups; using 2 heads Bibb or Butter Lettuce
- Fresh Cilantro Leaves
- Fat-Free Shredded Cheddar Cheese
- Lime wedges

Cream the cheese and butter in the bowl of an electric mixer fitted with the paddle attachment until light
- 8 ounces cream cheese (at room temperature)
- 1/2 pound unsalted butter (at room temperature)
- 1/4 cup granulated sugar (plus 9 tablespoons)
- 1/4 teaspoon kosher salt
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/4 cup light brown sugar (packed)
- 1 1/2 teaspoons ground cinnamon
- 3/4 cup raisins
- 1 cup walnuts (finely chopped)
- 1/2 cup apricot preserves (pureed in a food processor)
- 1 egg (beaten with 1 tablespoon milk, for egg wash)
