Country Quiche

Preheat the oven to 350 degrees F
- 1 pound ground pork sausage with sage
- 1 teaspoon baking powder
- 20 grape tomatoes, sliced in half and sprinkled with salt
- 6 large eggs
- 10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
- Salt and pepper
- Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)
Spaghetti with Basil and Shrimp

Sauté some garlic with a teaspoon of crushed chile (if you want) in olive oil
- 1/2 lb chitarra cut spaghetti (or thick spaghetti)
- 1/2 lb fresh shrimp peeled & deveined
- 4 tbsp tomato paste
- 1 clove garlic
- 1/2 cup freshly sliced basil
- 1/4 cup white wine
- 1 tsp crushed chile flakes
Chicken Saltimbocca

Season the chicken with salt and pepper
- Four 6-ounce skinless, boneless chicken breast halves, butterflied and lightly pounded
- Salt and freshly ground pepper
- 8 large sage leaves
- 4 thin slices prosciutto di Parma
- All-purpose flour, for dusting
- 2 tablespoons extra-virgin olive oil
- 4 tablespoons unsalted butter, cut into tablespoons
- 1/4 cup plus 2 tablespoons dry white wine
- 1 cup chicken stock or low-sodium broth

- 1 Shallot (chopped)

- 2 cups San Marzano Tomatoes (drained and chopped)

- 1/4 cup Heavy Cream

Apple Rose Pie

Preheat oven to 375ºF. Lightly butter an 8-inch pie dish
- 1 box store-bought puff pastry
- 2-3 large apples (such as honey crisp, core removed and thinly sliced)
- 1 lemon (zested and juiced)
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1 jar apricot preserves (8 ounces)
- 2 cups half-n-half
- 1 vanilla bean (split lengthwise, beans removed with the back of a knife)
- 4 egg yolks
- 1/4 cup sugar
- 2 tablespoons calvados (apple brandy)

1. Heat oven to 375ºF. 2
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 cup butter or margarine, softened
- 1 teaspoon vanilla
- 1 egg
- 2 1/4 cups Gold Medal® all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup coarsely chopped nuts
- 1 package (12 ounces) semisweet chocolate chips (2 cups)
Stuffed Mushrooms

Preheat oven to 375 degrees F
- 1 tablespoon extra-virgin olive oil, plus more drizzling
- 6 ounces sweet Italian sausage (about 2 links), removed from casings
- 2 garlic cloves, minced
- 1 large shallot, minced
- 24 large button mushrooms, caps cleaned, stems trimmed and finely chopped
- Coarse salt and freshly ground pepper
- 1 tablespoon finely chopped fresh flat-leaf parsley leaves
- 2 tablespoons finely chopped fresh oregano leaves, plus whole leaves for garnish (optional)
- 1 large egg, lightly beaten
- 2 tablespoons plain dry breadcrumbs

In 6 quarts of boiling salted water, cook the pasta until al dente
- 1 pound of penne pasta
- 14oz. Baby spinach
- 2 of garlic, chopped
- 1 yellow onion, chopped
- 8 Portobello mushrooms, sliced
- 1/2 cup of walnuts, coarsely chopped
- 2 Tbls of extra virgin olive oil
- 1 Tbl of butter
- 1/2cup of chicken broth
- 1 cup of heavy whipping cream
- 3oz of mozzarella cheese
- 3oz of fontina cheese
- 3oz of mild provolone cheese
- 3oz of Gorgonzola
- 1/2 tsp of salt
- 1 tsp of fresh grated black pepper
Pork Chops Marsala

Evenly season pork chops, on both sides, with 1/2 tsp salt and 1/4 tsp black pepper
- 4 boneless pork loin chops, 1/2 in. thick (4 oz. each), trimmed of fat
- 3 tsp olive oil
- 1 pkg. (10 oz.) sliced cremini or white mushrooms
- 1 lg. shallot, chopped (1/4 cup)
- 1/2 tsp. dried thyme or 1 1/2 tsp fresh thyme leaves
- 1 lb. asparagus, ends trimmed
- 1/2 cup reduced sodium chicken broth
- 1/3 cup marsala wine
