- 1/4 cup seasoned dry bread crumbs
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 cup freshly grated Parmesan cheese
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 extra-large egg, beaten
- Vegetable oil
- Olive oil
- 1 Jar Spaghetti Sauce
Paleo Blueberry Muffin Recipe

These are better than Starbucks Muffins!
- 2 1/2 cups almond flour
- 1 Tablespoon coconut flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 Tablespoon vanilla
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/4 cup coconut milk*
- 2 eggs
- 1 cup fresh or frozen blueberries
- 2-3 Tablespoons cinnamon
Quick Chicken Cutlets

Rinse the chicken breasts under running water, then place them on a double layer of paper towels and blot them dry
- 4 boneless, skinless chicken breasts
- 2/3 cup fine dry bread crumbs
- 1/3 cup freshly grated parmesan
- 2 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 egg, beaten
- 2 Tbsp milk
- 1/2 cup flour
- 2 to 4 Tbsp oil for frying
Cranberry Bread

Preheat oven to 350. Spray a 5 x 9 loaf pan with nonstick spray
- 1 1/4 cup all-purpose flour
- 1 cup sugar
- 3/4 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp orange zest
- 2/3 cup orange juice
- 3 TBL light stick butter, melted
- 1/4 cup fat-free egg substitute
- 1 cup fresh cranberries, coarsely chopped
- 1/2 cup each dried cranberries and golden raisins
Chicken Francese

Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them
- 4 skinless, boneless, chicken breasts
- All purpose flour, for dredging
- Kosher salt and ground black pepper
- 4 large eggs
- 3 Tbl water
- 1/4 cup oil
- 1/2 lemon cut in rounds
- 1/2 cup dry white wine
- 1 cup chicken broth
- 1/2 lemon, juiced
- 2 Tbl unsalted butter
- 1/4 cup chopped parsley
Creamy Farfalle with Cremini, Asparagus, and Walnuts

Bring a large pot of salted water to a boil
- Salt
- 1 pound farfalle pasta
- 3 tablespoons butter
- 1 pound cremini mushrooms, thickly sliced
- 1 pound thin asparagus, trimmed, cut crosswise into 1-inch pieces
- 1 cup mascarpone cheese
- Pinch freshly grated nutmeg
- 3/4 cup walnuts, toasted
- 1/4 cup freshly grated Parmesan
Fruit Cobbler

Preheat oven to 425° F. Thinly slice fruit
- 4 cup apples or peaches, sliced
- 1/2 cup sugar
- 1 Tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp cinnamon
- 1 cup + 2 Tbsp bisquick
- 1/3 cup milk
Spaghetti with Garlic and Olive Oil

Bring a large pot of cold water to a boil over high heat, then salt it generously
- 1 pound dry spaghetti
- salt and freshly ground black pepper to taste
- 6 cloves garlic, sliced thin
- 1/2 cup olive oil (note: I prefer a regular olive oil for this recipe, as opposed to a strongly flavored extra virgin olive oil)
- 1/4 teaspoon red pepper flakes, or to taste
- 1/4 cup chopped Italian parsley
- 1 cup finely grated Parmesan cheese (highly recommend Parmigiano-Reggiano)
- It's not traditional, but for extra richness add 1 tablespoon of butter when you toss with the cheese.
Roasted Chicken with Vegetables

- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- 1 (3 1/2- to 4-pound) whole chicken
- 2 carrots, coarsely chopped
- 2 celery ribs, coarsely chopped
- 1 medium onion, coarsely chopped
- 1 cup chicken broth

- For the chicken:
- 1 1/4 pounds NatureRaised Farms Boneless Skinless Chicken Breasts
- 1/4 cup olive oil
- 1/3 cup lime juice
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- 2 cloves garlic minced
- 1/4 cup water
- 1 1/2 teaspoons smoked paprika
- 1 teaspoon onion powder
- 1-2 tablespoons chili powder depending on the heat level of your chili powder. I use a mild chili powder so I do the full 2 tablespoons.
- 3 cups cooked white or brown rice or quinoa
- 1/3 cup chopped cilantro leaves
- the juice of 1 lime
- salt and pepper to taste
- 1 15- ounce can of black beans drained and rinsed
- 1/2 cup salsa or pico de gallo
- 1 avocado thinly sliced
- 1/4 cup light sour cream
- 1/2 cup shredded romaine lettuce
