PUMPKIN SOUP

Sautee garlic and onion until soft…
- 1/4 stick butter
- 2 cloves garlic
- 1 large onion
- 2 cups pumpkin puree
- curry powder to taste
- bayleaf
- 3 cups Stock ( ck or vegetable )
- 1/3 cup light cream
- coconut for garnish
- salt and pepper
Chive and Garlic Mashed Potatoes

Put the cut potatoes into a large pot, cover them with cold water, and add a large pinch of salt
- 4 to 6 pounds Yukon gold potatoes, peeled
- Kosher salt and freshly ground black pepper
- 1 cup heavy cream
- 1/2 stick (1/4 cup) unsalted butter
- 4 cloves garlic, lightly crushed
- 3 sprigs fresh thyme
- 2 tablespoons chopped chives
FIRE ROASTED CORN SALAD

• Brush corn with oil and grill over medium high heat for 10 minutes turning occasionally
- 6 ears of corn - shucked and cleaned
- 1 red pepper
- 2 Tbs. olive oil
- 1 Tbs. Chili Lime Rub
- 2 tomatoes diced
- 1 avocado peeled, pitted and diced
- 2 Tbs. fresh cilantro chopped
- 1/2 cucumber, peeled, seeded and diced
- 1/4 cup shredded carrots
- Juice of 1/2 lime
- Salt and pepper to taste
CORNISH HENS SANGRIA

Remove and discard giblets and necks from hens, cut hens lenghtwise in half and rinse under cold water
- Serves 6
- 3 fresh Cornish hens
- 2/3 cup Teriyaki marinade & sauce ( Kikkoman )
- 1/4 cup red wine
- 1 tsp. Grated fresh orange peel
- 1 tsp. Grated fresh lemon peel.
CHICKEN SALAD

Serves 4 Place 2 cups loosely packed , cooked chicken meat ( skin removed), in a medium bowl

- Place 2 cups loosely packed , cooked chicken meat ( skin removed), in a medium bowl.
- Add 1 medium peeled and diced Granny Smith apple, 1 medium peeled and diced Bartlett peer,
- 1 stalk celery cut into 1 inch thick slices and 1/2 cup grapes cut in half. Set aside.
- In a small bowl, whisk together a dressing using 2 Tbsp Dijon mustard, 1/4 cup lowfat mayonnaise,
- 1/4 plain lowfat yogurt, 2 Tbsp.apple-cider vinegar and 1/4 cup loosely packet, roughly chopped fresh herbs such as Italian parsley and basil. Add to chicken and toss to coal. Serve on a bed of salad greens.
SANTA FE CHICKEN PILAF

Prepare Rice according to package directions, using chicken broth instead of water
- 1 can ( 14-1/2 oz ) fat-free chicken broth
- 1 tsp cumin
- 1 cup canned seasoned diced tomatoes
- 2 Pounds barbequed chicken breast cut in strips,
- 2 Packages Rice Pilaf
- 1 can ( 8- 3/4 oz ) whole kernel corn
- 1 cup canned black beans, drained , rinsed
