Brothy Chinese Noodles

1. Heat 1 tablespoon oil in a large saucepan over medium heat
- 6 servings, about 1 1/3 cups each
- Active time: 30 minutes | Total: 30 minutes
- 2 tablespoons hot sesame oil (see Note), divided
- 1 pound 93%-lean ground turkey
- 1 bunch scallions, sliced, divided
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 4 cups reduced-sodium chicken broth
- 3/4 cup water
- 3 cups thinly sliced bok choy
- 8 ounces dried Chinese noodles (see Note)
- 3 tablespoons reduced-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 small cucumber, sliced into matchsticks, for garnish

Put rolled oats in food processor and blend oatmeal to a fine powder
- 1/2 cup rolled oats (gluten free oats)
- 1/2 cup cottage cheese
- 2 large eggs
- 1/2 tsp steviva blend, honey, or maple syrup

- 1/4 tsp cinnamon
- 1/4 cup blueberries
- 1/2 tsp baking powder

BROCCOLI - LEEK SOUP – 3 persons

Melt butter in the olive oil, add leeks and cook over moderate high heat, Stir in the brocoli, garlic, stock, salt

- 1/2 onion, chopped
- 2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried
- 1/2 small red bell pepper, seeded and chopped
- 2 tablespoons all-purpose flour
- 1/2 cup dry white wine
- 1 cup chicken or vegetable stock
- 1/2 cup half-and- half or heavy cream
- 1 can (15 ounces) artichoke hearts in water, drained and coarsely chopped
- 2 boxes, 10 ounces each, chopped spinach, defrosted and squeezed dry in kitchen towel
- 1 1/2 cups shredded Italian 4 cheese blend (provolone, Parmesan, mozzarella and Asiago) available in 10-ounce pouches on the dairy aisle of your market
- Salt and pepper
- 1 round loaf crusty bread: top removed and cubed, bottom hollowed out to use as serving bowl
- 1 loaf multigrain or whole wheat baguette, sliced at bakery/bread counter in market

This pretty rice dish with lime juice and cashews and crunchy fried dhal goes well with fish and shrimp curries
- 2 1/2 Tsp. salt
- 2 cups long-grain rice ( not basmati )
- 2 tsp. Ghee or butter
- 1/3 cup broken cashew pieces
- 1/4 cup vegetable oil
- 1 tsp. mustard seeds
- 2 dried red chilies
- 15 fresh curry leaves
- 2 Tbsp. Channa dhal or yellow split peas
- 2 Tbsp. Urad dhal
- 1/4 tsp. turmeric
- 1/8 tsp. ground asafetida.
- 1 tsp. minced fresh green chili ( serrano or Thai )
- 5 Tbsp. Fresh lime juice.
