CHICKEN – GRILLED RED PEPPER CHICKEN

Trim excess fat from chicken and place in a resealable plastic bag
- 4 servings
- 4 chicken breast quarters, with wings attached
- 1 cup freshly squeezed lemon juice
- 1 garlic clove, smashed
- 1 cup roasted red peppers, chopped
- 1 dried whole red chile, broken
- 2 Tbs.olive oil
- 1 tsp. each dried basil and mint
- 1/2 tsp. each salt and cracked black pepper.
CHICKEN JOE PATERNO

Preheat oven to 350 degrees
- 1/2 can water
- 4-8 chicken breasts, skinned and trimmed of fat
- 1 can cream of chicken soup
- 2 cups Pepperidge Farm seasoned stuffing
- 8 slices Swiss cheese
- 1 stick melted butter or margarine
CHEESE CROQUETTES

- 2 l. volle melk
- 350 gr. Goede boter
- 400 gr. Bloem
- 350 gr. Gemalen Parmesan
- 350 gr gemalen Gruyere
- 6 eieren
- Peper en zout een weinig muskaatnoot.

1. 1 Preheat oven to 350 degrees
- 3 3/4 lbs butternut squash
- 1 3/4 lbs acorn squash
- 6 tablespoons unsalted butter
- 1 (4 ounce) white onions, peeled trimmed,and finely diced
- 1/2 teaspoon kosher salt
- 1/8 teaspoon fresh ground white pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cardamom
- 4 cups chicken stock or vegetable stock, heated
- 1/2 cup creme fraiche
- 1 sprig fresh rosemary
- Roasted Red Pepper Coulis
- 2 red bell peppers
- 1/4 cup chicken broth
- salt and pepper

- Onions (I usually get white onions)
- Breadcrumbs (get seasoned or unseasoned, i prefer unseasoned)
- Seasoned Salt or BBQ seasoning
- Hot Sauce (use whatever your favorite type is)

- 1/2 cup coconut milk
- 3/4 cup water
- 2 large eggs
- 2 tbsp melted butter
- 1 cup brown rice flour
- 1/2 tsp salt
- 1 tsp steviva blend
- 1/2 tsp vanilla
- 1/4 tsp baking powder
- coconut oil to grease pan
HAM & MELON with COLESLAW

Whisk mayonnaise, vinegar, sugar,salt and pepper in a large bowl
- 1/4 cup light mayonnaise
- 1 1/2 Tbsp. Cider vinegar
- 1 Tbsp. Sugar
- 1 tsp. salt

- 4 cups each shredded green and red cabbage.
