- 4 ripe calavo avocados, peeled, seeded and mashed
- 2 vine-ripe tomatoes, chopped
- 1 onion, diced
- 2 jalapeño or Serrano chiles, minced
- 1/4 cup fresh cilantro, chopped, stems discarded
- 1 tsp dried oregano
- 1 fresh garlic clove mashed or minced or 1/8 tsp garlic powder juice from 1 fresh lime
- Hot pepper sauce, salt & pepper to taste
Pasta: Linguine With Chile, Crab, and Watercress

1. Boil 5 quarts water. With a mortar and pestle, grind garlic and salt into a smooth paste (or mix in a bowl)
- 1 1/2 teaspoons sea salt
- 1 large red chile, seeded and chopped
- 11 oz canned or frozen (defrosted) precooked crabmeat
- 1/3 cup extra-virgin olive oil
- Juice and zest of 1 lemon
- 1 package (16 oz) linguine
- Handful fresh parsley, chopped
- Handful watercress leaves, torn
BBQ CHINESE PORK

Marinate pork in above mixture
- 1 # pork, cut in pieces
- 2 T soysauce
- 1 T sugar
- 2 t pepper sate (from the Chinese store)
- 1/2 head garlic
- Black pepper
Penne Pasta Salad

Recipe: Cook pasta in a saucepan according to directions
- Ingredients:
- 8 oz penne pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, crushed
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 16 cherry tomatoes, halved
- 1 tbsp chopped fresh oregano
- 1/2 cup dry white wine (the alcohol content disappears the moment
- you cook the wine. Only the flavor stays). If
- you don't want to use wine, you can just delete
- it.
- 2 tbsp quartered , pitted black olives
- 3 oz arugula (a very good lettuce)
- salt and pepper
- fresh oregano sprigs to garnish
GRILLED FLANK STEAK

Place steaks in marinade for at least 2 hours
- Marinade:
- 2 flank steaks (16 to 22 oz)
- 1/2 cup olive oil
- 1/2 cup teriyaki sauce
- 3 garlic cloves crushed
- 1 t salt
- 1 t brown sugar
- 1 T vinegar
- White pepper
- Ginger powder
- 1 large red onion, slilced
Moroccan Chicken with Kumquats and Prunes

1. Pour the olive oil int a large pot set over medium-high heat

- 4 ounces pitted prunes
