Broccoli Dipped in Wonderful Peanut Sauce

Children love this dish! The broccoli can be cooked up to several days ahead
- 1 lg bunch broccoli (1 1/2 lb.), separated into florets, stems cut into spears
- 1 cup smooth peanut butter
- 1/4 cup chopped cilantro
- 3 Tbsp. sugar
- 2 Tbsp. low-sodium soy sauce or tamari
- 2 tsp. cider vinegar
- 2 cloves garlic, minced (2 tsp.)
- Pinch cayenne pepper
Worry-Free Ranch Dressing

Mix the sour cream, mayonnaise, vinegar and water in a bowl
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 Tbs. distilled white vinegar
- 1 Tbs. water
- 1/2 cup grated Parmesan cheese (2 oz.)
- 1 tsp. garlic powder or finely minced garlic
- 1 1/2 tsp. onion powder
- pinch of sea salt
Rotisserie Style Chicken

Use a 6 qt slow cooker. Combine spice mixture and rub all over chicken, inside and out
- 1 4-6 lb chicken, skinned or not
- 1 tsp. kosher salt
- 1 tsp. paprika
- 1 tsp. onion powder
- 1/2 tsp. dried thyme
- 1 tsp. Italian seasoning
- 1/2 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 1 lg onion quartered
- 4 garlic cloves
Egg and Pesto Breakfast Wrap

If the wrap is freshly made, allow to cool for 5 minutes
- 1 Flaxseed wrap
- 1 Tbs. basil pesto or sun dried tomato pesto
- 1 hard boiled egg, thinly sliced
- 1 thin tomato slices
- handful of baby spinach or shredded lettuce
Crock Pot Chili

1. Cook the ground round and drain
- 1 lb ground round
- 1 cup chopped onion
- 1/2 cup chopped green pepper
- 1/4 cup dry red wine or water
- 1 Tbsp. chili powder
- 1 tsp. sugar
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 1 garlic clove, minced
- 1 15-oz. can kidney beans, undrained
- 1 14.5-oz. can Mexican-style stewed tomatoes w/jalapeno peppers and spices, undrained
- 6 Tbsp. reduced fat shredded cheddar cheese
Frank's Red Hot Chicken Wings

Bake chiken wings and top with sauce
- 4-5 lbs chicken wings
- 1/2 cup cold unsalted butter
- 1 1/2 Tbs white vinegar
- 1/4 tsp Worcestershire Sauce
- 1/4 tsp cayenne pepper
- 1/8 tsp garlic powder
- salt to taste
Tadziki

Drain yogurt unrefrigerated overnight in cheese cloth hanging over a bowl
- 1 qt plain yogurt
- 4 cloves garlic (2 for milder)
- 1 med cucumber grated fine
- 1/2 tsp dill weed
- 2 Tbsp high quality olive oil
- Salt to taste
- Cracked fresh pepper to taste

- 8 slices bread (crusts removed) and cut into cubes (typically I use wheat)
- 1 lb. cheddar cheese, grated (Colby or Swiss would also work)
- 8 - 12 eggs depending on how many people you are serving ( I think I used about 10 for your smaller pan)
- salt and pepper to taste
- 3/4 cup - 1 cup of milk
- 3/4 Tsp. dry mustard
