Pizza Sauce

This makes a chunky sauce
- cooking spray
- 1/4 cup finely chopped onion
- 1 garlic clove, minced
- 1/4 cup white wine
- 2 Tbs. tomato paste
- 1 tsp. dried oregano
- 1/2 tsp. crushed red pepper
- 1/8 tsp. freshly ground pepper
- 1 14.5-oz. can crushed tomatoes, undrained
- 1/2 tsp. balsamic vinegar
Turley Avocado Wraps

Place the turkey and Swiss cheese in the center of the wrap
- Flaxseed wrap, cooled if freshly made
- 2 or 4 deli slices roast turkey
- 2 thin slices Swiss cheese
- 1/4 cup bean sprouts
- 1/2 Hass avocado, thinly sliced
- handful of baby spinach leaves or shredded lettuce
- 1 Tbs. mayonnaise, mustard, wasabi mayonnaise, or sugar free salad dressing
Turkey and Wild Rice Soup*

Place rice, 4 cups water and 3/4 tsp
- 1 cup wild rice
- 4 cups water
- 1-1/4 tsp. salt
- 4 Tbs. butter
- 1 onion, chopped
- 3 cups sliced mushrooms
- 1/2 cup chopped celery
- 1/4 cup flour
- 6 cups low salt chicken broth
- 1/2 tsp. curry
- 1/2 tsp. dry mustard
- 1/2 tsp. dried chervil
- 1/4 tsp. ground white pepper
- 2 cups whole milk
- 1/4 cup Sherry
- 1 cup chopped turkey
Georgia's Chicken Salad

Mix all together and refrigerate
- shell pasta
- cooked chicken breast
- mayonnaise
- scallions (green part only)
- some chopped green olives with pimentos
- lots of dill weed
- paprika on top
- maybe some seasonings?
Thanksgiving Turkey Brine*

1. Bring 1 quart water, the salt, bay leaves, and spices to a simmer, stirring util salt has dissolved
- 18-20 lb turkey, patted dry
- 7 qts. water
- 1 1/2 cup coarse salt
- 6 bay leaves
- 2 Tbsp. whole corriander seeds
- 1 Tbsp. dried juniper berries
- 2 Tbsp. whole black peppercorns
- 1 Tbsp. fennel seeds
- 1 tsp.black or brown mustard seeds
- 1 bottle dry Riesling
- 2 med onions, thinly sliced
- 6 garlic cloves, crushed
- 1 bunch fresh thyme
Pico De Gallo*

Combine the tomatoes, red onion, cilantro, salt and sugar
- 2 ripe tomatoes, peeled and finely chopped
- 2 Tbsp. finely chopped red onion
- 2 Tbsp. snipped cilantro

- 2 15-oz. cans diced tomatoes, drained, liquid reserved
- 1 15-oz. can black beans, rinsed and drained
- 3/4 cup quinoa
- 3 lg carrots, grated (1 1/2 cups)
- 1 1/2 cup grated reduced-fat pepper Jack cheese, divided
- 4 lg red bell peppers, halved lengthwise, ribs removed
