Overnight Breakfast Pie

In a large skillet cook bacon over medium heat until crisp
- 8 slices bacon
- 1/2 cup panko (Japanese-style bread crumbs)
- 5 eggs
- 2 1/2 cup frozen shredded hash brown potatoes
- 1 cup shredded Swiss cheese (4 ounces)
- 1/2 cup cottage cheese
- 1/3 cup milk
- 1/4 cup chopped green onions (2)
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 4 drops bottled hot pepper sauce
- Sliced green onions (optional)
Spinach Noodle Casserole*

Preheat to 350° Cook spinach, drain well
- 2 pkgs. chopped spinach
- 2 Tbs. minced onion
- 1 pint sour cream
- 1/2 cup butter
- 1/2 lb. grated Jack Cheese
- 4-6 oz. egg noodles
