Guacamole

In a medium bowl, mash the avocado flesh with a fork until somewhat chunky (not smooth)
- 4 hass avocados (ab 7 oz. each), preferably organic
- 1 serrano chile, stemmed and minced
- 1 sm clove garlic, minced (optional)
- 2 Tbsp. finely chopped white onion
- 2 Tbsp. finely chopped seeded tomato
- 2 Tbsp. chopped cilantro, plus more for garnish
- 2 - 3 tsp. fresh lime juice, plus 1 lime cut into wedges
- 1/2 tsp. salt, plus more to taste
- 1 bag good-quality tortilla chips
Broccoli, Cannellini Bean & Cheddar Soup

White beans pureed into this broccoli soup make it extra creamy so you don't need heaps of cheese to do the job
- 1 14 oz. can reduced-sodium chicken broth, or vegetable broth
- 1 cup water
- 1 lb broccoli crowns, trimmed and chopped (ab 6 cups)
- 1 14 oz. can cannellini beans, rinsed (see Tip)
- 1/4 tsp. salt
- 1/4 tsp. ground white pepper
- 1 cup shredded extra-sharp Cheddar cheese
Jack Daniel's Rib Glaze

Prepare the grill. Bring a large pot of water to a boil
- 2 racks of ribs (about 5 1/4 lb)
- 1 cup jack daniel's whisky
- 1 cup ketchup
- 1/2 cup dark brown sugar, packed
- 1/4 cup vinegar
- 1 Tbsp lemon juice, freshly squeezed
- 2 tsp worcestershire sauce
- 3 garlic cloves, finely chopped
- 1/2 tsp dry mustard
- Crushed red pepper flakes to taste
- Salt and pepper to taste
Healthy Chicken Salad
