Bourban Hot Dogs*

Put hot dogs in bowl and cover with bourbon
- 3 pkgs hot dogs, cut in small pieces or use cocktail wieners or smokey links
- 1 small onion, chopped
- 1/2 cup brown sugar
- 1 24-oz. ketchup
- 1 Tbs. mustard
Homemade Spice Blend

Mix all together. Makes 1 cup Sprinkle seasoning on chicken or fish, with a little olive oil
- 1/2 cup smoked paprika
- 3 Tbs kosher salt
- 4 tsp garlic powder
- 4 tsp onion salt
- 4 tsp dried parsley
- 2 tsp ground black pepper
- 2 tsp dried thyme
- 1 tsp dried mustard
- 1/4 tsp cayenne pepper
Chicken and Black Eyed Pea Soup

Heat oil in a 6 qt. saucepot over medium heat
- 2 Tbs. olive oil
- 2 large onions, diced (about 2 cups)
- 3 large carrots, diced (about 2 cups)
- 2 medium parsnips, peeled and diced about 2 cups)
- 2 medium potatoes, peeled and diced (about 2 cups)
- 1 Tbs. chopped fresh sage or 1 tps. dried sage, crushed
- 5 cups chicken broth
- 3/4 lb. cooked chicken, sliced or shredded (about 2 1/2 cups)
- 1 can 15-oz. black eyed peas, rinsed and drained
Creme Fraiche

- 1 15-ounce can chickpeas, rinsed well and drained
- 1/3 cup well-stirred tahini
- 4-5 tablespoons fresh lemon juice (about 2 lemons)
- 2 tablespoons extra-virgin olive oil, divided
- 1 large garlic clove, peeled and thinly sliced
- fine sea salt
- freshly ground black pepper
- 1-2 tablespoons hot water
- 8 mint leaves, thinly sliced
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon ground cumin
- 1/8 teaspoon fine sea salt

- 2 (28 oz.) cans crushed tomatoes
- 1 (6 oz.) can tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 16 ounces part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup grated mozzarella cheese
