Broccoli Soup

Cook broccoli and onion in water
- 1 box frozen broccoli
- 2 Tbs. minced onion
- 1/2 cup boiling, salted water
- 2 cup milk
- 1 can condensed cream of celery or potato soup
- 1/2 cup or 2/3 oz. shredded swiss
Tuscan Mushrooms*

Quite the robust flavor, equally good out of the oven, or at room temperature
- 1/2 cup diced jarred roasted red peppers
- 1/2 cup diced pitted green olives
- 1/2 cup freshly grated Pecorino Romano
- 2 scallions, white parts only, finely chopped
- 2 Tbs extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 lb. white button mushrooms, cleaned and stemmed
- 1/4 cup finely chopped fresh basil leaves
Knox Blox

In a large bowl combine gelatin and jello
- 4 envelopes Knox Gelatin
- 3 small jellos
- 4 cups boiling water
Frosting

Combine milk and flour over double boiler
- 1 cup sweet milk
- 3 Tbs. flour
- 1 cup white sugar
- 1 cup (1/2 lb.) butter
- 1 Tbs. vanilla
Spanish Lasagna

Mix ricotta cheese, 2 cups mozzarella cheese, 1/2 cup parmesan cheese, and eggs together
- 1 15 oz. container ricotta cheese
- 3 cup shredded mozzarella cheese, divided
- 3/4 cup shredded parmesan cheese, divided
- 2 eggs, beaten
- 1 28 oz. can spaghetti sauce
- 1 14 oz. can artichoke hearts, drained and chopped
- 1 4 oz. can sliced mushrooms, drained
- 1/2 cup sliced black olives
- 2 Tbsp. dry red wine
- 9 lasagna noodles, cooked and drained
Taco Salad

SALAD Brown and drain meat
- SALAD
- 2 cups regular sized fritos, crushed
- shredded lettuce
- shredded cheddar cheese
- 1 lb. cooked ground round
- 1 pkg. onion soup mix
- DRESSING
- 1/2 cup ketchup
- 1/4 cup red wine
- 2 Tbs. oil
- 1 Tbs. sugar
- salt and pepper to taste
Water Chestnuts Wrapped in Bacon*

Cut bacon slices in half. Wrap bacon slice around each water chestnut and secure with a toothpick
- 1/2 lb bacon
- 2 3oz. cans whole water chestnuts
- 1 jar apricot preserves
- 1 cup brown sugar
- 1/2 cup apple cider vinegar
Blue Cheese and Walnut Spread*

In a medium bowl, stir cream cheese with a wooden spoon until softened
- 4 oz. bar of cream cheese, room temp
- 1/2 cup walnuts, chopped
- Coarse salt and ground pepper
- 4 oz. (1 cup) cold crumbled blue cheese, such as Stilton
- Crackers or crostini, for serving
One Pot Pasta

Place all in sauté pan, turn burner to high and boil, stirring contstantly for 9 minutes
- 12 oz. linguini
- 12 oz. cherry tomatoes halved
- 1 onion thinly sliced
- 4 cloves garlic, thinly sliced length wise
- 2 whole sprigs basil
- 1/2 tsp. red pepper flakes
- 1/4 tsp. ground pepper
- 2 tsp. salt
- 2 gloggs olive oil
- 4 1/2 cup water
Lighter General Tso's Chicken
