Rhubarb Cake*

Cream brown sugar, margarine and egg
- 1 1/2 cups brown sugar
- 1/2 cup margarine
- 1 egg
- 2 cups flour
- 1 1/2 tsp. baking soda
- 1 1/2 cups cup up rhubarb
- 1 cup milk
Honey, Dijon, Ginger Glazed Salmon

Mix glaze and slather on salmon
- 1 lb. salmon fillet, skinned
- 2 tsp. olive oil
- 1 Tbs. honey
- 1 Tbs. Dijon mustard
- 2 tsp. grated fresh ginger
Chicken and Parsnip Soup

1. Heat olive oil in a medium saucepan over medium-high heat
- 1 1/2 teaspoons olive oil
- 3/4 cup thinly diagonally sliced parsnip (2 parsnips)
- 3/4 cup thinly sliced shallots (2 shallots)
- 1 (4-ounce) package gourmet mushroom blend
- 1 garlic clove, minced
- 2 1/2 cups fat-free, lower-sodium chicken broth
- 1 cup water
- 1 cup garbanzo beans, rinsed and drained ( I used 1 can cannellini beans)
- 1 cup shredded skinless, boneless rotisserie chicken breast (I used a can of chicken)
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1/8 teaspoon hot sauce (I used more like 1 tsp.)
- 1 thyme sprig
- 2 tablespoons chopped fresh parsley
Sticky Bourbon Chicken with Rice

THE NIGHT BEFORE: Combine the soy sauce, oil, vinegar, bourbon, and brown sugar in a bowl
- 1 1/2 lb chicken thighs (I used boneless skinless - delish!)
- 1/2 cup low sodium soy sauce
- 1/4 cup oil
- 1/4 cup vinegar
- 1/4 cup bourbon
- 1/4 cup brown sugar
- 1 Tbsp. crushed or sliced ginger (fresh, not dried)
- 4 cloves crushed garlic
- 4-5 green onions, cut into thirds or sliced
- 1 cup uncooked basmati rice
Zucchini Parmesan Crisps

Preheat the oven to 450° F
- 2 med zucchini (ab 1 lb total)
- 1 Tbsp. olive oil
- 1/4 cup freshly grated Parmesan (3/4-ounce)
- 1/4 cup plain dry bread crumbs
- 1/8 tsp. salt
- Freshly ground black pepper
Mashed Potato Skins

These potatoes taste like skins with the works and sour cream but they are boiled, not fried
- 6 slices bacon
- 2 lb sm Yukon gold potatoes, halved
- 1 cup buttermilk
- Salt and freshly ground black pepper
- 1/4 cup fresh chives, chopped
- 1/2 cup extra-sharp cheddar cheese, yellow or white
Classic Cream Gravy

Pour fat through a strainer, leaving about 1/2 cup pan drippings in the bottom of the skillet
- 1/4 cup pan drippings
- 3 Tbsp all-purpose flour
- 2 cup evaporated milk
- 1 cup unsalted beef stock
- 1/2 tsp fresh ground black pepper
- Salt to taste
Candied Walnuts*

Spray baking sheet with nonstick spray
- 1 cup walnuts
- 2 Tbsp. light corn syrup
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- generous pinch of cayenne pepper
Grilled Asparagus

Place asparagus in a heat proof colander in the sink
- 2 lb young asparagus, trimmed
- 1 gallon salted boiling water
- 2 Tbsp olive oil
- 1 tsp garlic, minced
- 1 tsp soy sauce
