Slice eggs in half and remove yolks
- 12 large eggs, hard boiled and peeled
- 1/2 cup mayonnaise
- 2 Tbs. finely minced pickled jalapenos, drained
- 1 Tbs. finely chopped chipotle chili in adobo sauce
- 1/2 tsp. Cajun spice blend
- salt to taste
- 1/4 tsp. hot smoked paprika
- Cajun spice blend
- 2 Tbs. chili powder
- 2 Tbs. paprika
- 1 Tbs. ground coriander
- 1 Tbs. garlic powder
- 1 Tbs. salt
- 1 Tbs. dried oregano
- 2 tsp. ground cumin
- 1 tsp. black pepper
- 1 tsp. cayenne pepper
- 1 tsp. crushed red pepper
Mushrooms Florentine

Wash and dry mushrooms. Slice off stems
- 1 lb. mushrooms
- 2 10-oz. pkgs. chopped frozen spinach partially cooked and well drained
- 1/4 cup chopped onion
- 1 tsp. salt
- 1/4 cup melted butter
- garlic salt to taste
- 1 cup shredded cheddar (or more)
Spinach Salad Dressing

Stir all ingredients together over low heat until sugar is dissolved
- 3 Tbs. red wine vinegar
- 1 tsp. sugar
- 1/2 tsp. dijon mustard
- 2 Tbs. olive oil
