Pineapple Upside-Down Muffins

- TOPPING
- 2 Tbsp. packed light brown sugar
- 2 Tbsp. chopped walnuts, or pecans (optional)
- 1 10 oz. can pineapple slices
- MUFFINS
- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 Tbsp. ground cinnamon
- 2 lg eggs
- 1/2 cup packed light brown sugar
- 1/4 cup canola oil
- 2 Tbsp. pineapple juice, or orange juice
- 1 tsp. vanilla extract
- 1 8 oz. can crushed pineapple, (not drained)
- 1 cup grated carrot, (1 large)
- 1/2 cup old-fashioned oats
- 3/4 cup raisins, preferably baking raisins (see note)
- 1/4 cup chopped walnuts, or pecans (optional)
Asian-Glazed Chicken Thighs

The tasty glaze gives these chicken thighs a mahogany sheen
- 1/3 cup rice vinegar
- 1/4 cup lower-sodium soy sauce
- 3 Tbsp. honey
- 2 Tbsp. dark sesame oil
- 1 1/2 Tbsp. chile paste (such sambal oelek)
- 10 garlic cloves, minced
- 12 bone-in chicken thighs, skinned
- Cooking spray
- 1/2 tsp. salt
Parmesan & Mayo Crusted Chicken Breasts

Mix together and spread over chicken breasts
- 1/2 cup Parmesan cheese
- 1 cup mayonnaise
- 1 tsp garlic powder
- 1 1/2 tsp season salt
- 1/2 tsp pepper
- 2-4 chicken breasts
Eric's Brandy Brown Sugar Salmon

Rhubarb Pudding Cake

Cover the bottom of an 8 or 9 inch square pan with fruit
- 2 cup chopped rhubarb
- 1 3/4 cup sugar, divided
- 3 Tbsp. butter, softened
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup milk
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1 cup sifted flour
- 1 Tbsp. cornstarch
- 2/3 cup boiling water
Honey, Dijon, Ginger Glazed Salmon

Mix glaze and slather on salmon
- 1 lb. salmon fillet, skinned
- 2 tsp. olive oil
- 1 Tbs. honey
- 1 Tbs. Dijon mustard
- 2 tsp. grated fresh ginger
Chocolate Decadence Cake

- 1 lb semisweet or bittersweet chocolate, chopped
- 1/2 cup + 2 Tbsp. unsalted butter
- 4 extra lg eggs (room temp)
- 1 Tbsp. sugar
- 1 Tbsp. flour
- 1 cup heavy (double) cream, whipped

- 1 (8 oz) PHILADELPHIA Cream Cheese, softened
- 1/2 cup butter, softened
- 1 pkg (16 oz) powdered sugar

- 1 pkg (7 oz) BAKER'S ANGEL FLAKE Coconut, divided
- Few drops red food coloring
- 1/2 tsp. water
- Decorations: 2 pieces red string licorice, 2 lg flat gumdrop candies, 17 sm gumdrops
