Chicken Tortilla Soup*

Cook chicken in boiling water
- 3 cups water
- 3 boneless, skinless chicken breasts
- diced potatoes
- 1 small onion, diced
- 4-5 stalks celery, diced
- 4-5 chicken bouillon cubes
- 1 pkg. Taco seasoning
- 1 can Mexican corn
- 1 can chopped chilies
- 1 can cream of chicken soup
- 1 carton sour cream
Apple-Orange Cranberry Sauce

Cranberry sauce has always been part of the traditional Thanksgiving menu
- 1/2 orange
- 2 cups water
- 1 tart apple, such as Granny Smith, pippin or
- McIntosh
- 3 cups fresh cranberries
- 1 1/4 cups sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
Greek Style Pork Loin

Cut 1/2 inch slits all over roasts
- 2 (2 1/2 pound) boneless pork loin roasts
- 3 garlic cloves, slivered
- 1/2 cup fresh lemon juice
- 2 Tbsp. olive oil
- 1 Tbsp. Greek Seasoning
- 1/2 cup chicken broth
- 1 cup light soy sauce
- Garnishes: lemon slices, fresh herbs
Lawry's Creamed Spinach 2

Cook spinach according to package directions
- 3 10 oz. packages frozen chopped spinach
- 4 slices bacon
- 1/2 cup finely chopped scallions
- 1 cup finely chopped yellow onions
- 1/4 tsp. finely chopped garlic
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbs. plus 2 tsp. unsalted butter
- 1/3 cup flour
- 2 cups milk
- 1/2 cup half and half
Claudia's Golden Round Steak

Mix mushroom soup, dry onion soup and water together
- 1 round steak, cut into pieces
- 1 can cream of mushroom soup
- 1/2 soup can water
- 1 package Golden Onion Soup Mix
- 1 cup sour cream
- 1 6oz. can sliced mushrooms
Hawaiian Ribs

Place onion in a 9x13x2" baking pan
- 1 large onion, sliced
- 3 to 3 1/2 lbs. county style pork ribs
- 3 garlic cloves, minced
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup water, divided
- 1 20-oz. can crushed pineapple in juice, undrained
- 1 12-oz. bottle chili sauce
- 1/2 cup packed brown sugar
- 1 tsp. ground ginger
- 1/2 tsp. ground mustard
Cranberry Pork Roast

1. In large skillet, cook pork roast in hot oil over medium heat until well browned on all sides
- 2 1/2 to 3 lb. rolled pork loin roast
- 1 Tbs. cooking oil
- salt and ground pepper
- 1 16-oz. can whole cranberry sauce
- 1/4 cup sugar
- 1/2 cup cranberry juice
- 1 tsp. ground mustard
- 1/4 tsp. ground cloves
- 2 Tbs. cornstarch
- 2 Tbs. cold water
- hot cooked noodles
Sherried Beef

Mix all ingredients together
- 3 lbs. stew meat
- 2 cans cream of mushroom soup
- 3/4 cup sherry
- 1/2 pkg. dry onion soup mix
- small can sliced mushrooms
Buttery Pecan Caramels

In heavy saucepan combine sugar, 1 cup half and half, corn syrup and butter
- 2 cups sugar
- 2 cups half and half
- 3/4 cup light corn syrup
- 1/2 cup sweet cream butter
- 1/2 cup semisweet chocolate chips, melted
- 64 pecan halves
Roasted Parsnip Soup with Balsamic Syrup

Position the rack in lower third of oven and preheat to 450°F
- 2 pounds parsnips, peeled and chopped into equal-sized pieces*
- 2 pears, peeled and cut into eighths
- 1 small yellow or white onion, peeled and cut into eighths
- 1/4 cup vegetable oil
- 1 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper
- 1 cup balsamic vinegar
- 4 cups reduced-sodium chicken broth or vegetable broth
- 2 1/4 cups low-fat milk
