Mary's Chocolate Cake

Use a 9" springform pan. Sprinkle bottom with sugar
- 1 cup UNsalted butter
- 3 oz. unsweetened chocolate
- 6 oz. semi sweet chocolate squares chopped
- 1 1/4 cup sugar
- 4 extra large eggs
- 1 Tbs. flour
Chocolate Toffee Bars

Spread nuts in buttered 9x9x2" pan
- 1 cup chopped nuts
- 1/2 cup butter
- 3/4 cup brown sugar
- 1/2 cup chocolate pieces
Fried Rice

Heat 1-Tbsp oil in a small skillet
- 1/3 cup light oil
- 1/2 cup cooked green peas
- 2 lg eggs
- 1/3 cup frozen corn
- 1 cup scallions coarsely chopped
- 6 oz chicken breast chopped
- 3 cup rice cold cooked
- 6 oz cooked ham chopped
- 1/2 cup green pepper, chopped
- 1/4 cup soy sauce
- 1/2 cup mushrooms, chopped
- 2 lg garlic cloves, minced
- 1/2 cup broccoli sm flowerets
- 1/2 tsp sugar
- 1/2 cup celery, chopped
- Salt and pepper to taste
White Chili*

In a large sauce pan cook onion, jalapeno and garlic in oil until tender
- 1 med onion, chopped
- 2 garlic cloves, chopped
- 1 Jalapeno pepper, seeded and chopped
- 2 Tbsp. fresh chopped parsley
- 1 Tbsp. lime juice
- 1 1/4 tsp. ground cumin
- 2 Tbsp. cornstarch
- 2 15.5-oz. cans great northern beans, rinsed and drained
- 1/4 cup water
- 4 cup chicken broth
- 2 cup cubed cooked chicken
Cheryl's Coconut Melting Moments

Mix flour, cornstarch and sugar in a separate bowl Cream butter with mixer til fluffy
- 1 cup flour (I always use unbleached white)
- 2 Tbsp. cornstarch
- 1/2 cup powdered sugar
- 1 cup butter, softened at room temp (do not microwave it to be softened)
- 1 1/3 cup (approx.) sweetened coconut flakes
Cranberry and Dried Cherry Relish*

- 1 12-oz. pkg. fresh cranberries
- 1 cup dried tart cherries
- 1 cup (packed) golden brown sugar
- 1/2 tsp. ground cardamom
Potato Salad 101

Place potatoes in a saucepan, and cover with water
- 2 pounds small all-purpose white or red potatoes
- 3 tablespoons white vinegar
- 1 tablespoon canola oil
- 1/2 cup chopped celery
- 1/2 cup finely chopped red onion
- 2 tablespoons sweet pickle relish, drained
- 3 hard-cooked large eggs, chopped
- 3/4 cup low-fat mayonnaise
- 2 tablespoons prepared mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Chrissy's Butterscotch Pecan Dessert

In a bowl, cut butter into flour until crumbly; stir in 1/2 cup pecans
- 1/2 cup cold butter
- 1 cup flour
- 3/4 cup chopped pecans, divided
- 1 8-oz. pkg. cream cheese, softened
- 1 cup confectioners' sugar
- 1 carton (8 oz) frozen whipped topping, thawed, divided
- 3 1/2 cups cold milk
- 2 small pkgs. instant butterscotch or vanilla pudding
Artichoke Chicken Pasta

Place chicken strip in a 4 quart slow cooker with water and bouillon
- 1 lb. frozen grilled chicken breast strips
- 1 Tbs. chicken bouillon granules
- 1/4 cup water
- 1 17 oz. jar alfredo sauce
- 1 6.5 oz. jar marinated artichoke hearts, drained
- 1 6 oz. pkg. angel hair pasta, cooked
Blue-Rugula Burgers*

Heat 1 tablespoon of olive oil and 1 tablespoon butter over medium heat
- 2 Tbsp. extra-virgin olive oil, divided
- 2 Tbsp. butter
- 1 lg onion, sliced
- Salt and freshly ground black pepper
- 1 Tbsp. brown sugar
- Splash water
- 1/4 cup spicy brown mustard
- 1 1/2 lb ground sirloin
- 2 cloves garlic, grated
- 3 Tbsp. Worcestershire sauce, eyeball it
- A handful fresh parsley, finely chopped
- 1/2 lb Cambazola blue cheese, thinly sliced
- 4 crusty rolls, split, lightly toasted
- 2 handfuls arugula leaves, coarsely chopped
