Banana-Blueberry Muffins

Blueberries can be replaced by equivalent quantities of raspberries, cranberries or other berries
- 2 cups ground almonds (can be purchased pre-ground)
- 1/4 cup ground flaxseeds (can be purchased pre-ground
- sweetener such as Truvia, stevia extract or Splenda equivalent to 3/4 cup sucrose
- 1 tsp. baking powder
- dash fine sea salt
- 1 ripe banana
- 2 large eggs
- 1/2 cup sour cream or coconut milk
- 1/4 cup walnut oil, coconut milk, or extra-light olive oil
- 1 cup blueberries, fresh or frozen
Beef Pot Roast

1. Place vegetables in bottom of slow cooker 2
- 12 oz. whole tiny new potatoes, unpeeled (size B)
- 8 sm carrots, cut into chunks
- 2 sm onions, cut into wedges
- 2 ribs celery, cut up
- 2 1/2 to 3 lb pot roast
- 2 Tbsp. cooking oil
- 3/4 cup dry wine, water or tomato juice
- 1 Tbsp. Worcestershire sauce
- 1 tsp. instant beef bouillon granules
- 1 tsp. dried basil
Herb-Crusted Salmon with Spinach Salad

Preheat oven to 450°. Line a baking sheet with aluminum foil; set aside
- 3 slices white sandwich bread
- 1 cup fresh parsley
- 2 Tbsp. olive oil
- Coarse salt and ground pepper
- 4 skinless salmon fillets (6 oz. each)
- 2 Tbsp. Dijon mustard
- 3 Tbsp. fresh lemon juice
- 5 oz. baby spinach
- 1/2 med red onion, thinly sliced
Perfect Roast Chicken

Preheat the oven to 425° F
- 1 (5 to 6 lb) roasting chicken
- Kosher salt
- Freshly ground black pepper
- 1 lg bunch fresh thyme, plus 20 sprigs
- 1 lemon, halved
- 1 head garlic, cut in half crosswise
- 2 Tbsp. (1/4 stick) butter, melted
- 1 lg yellow onion, thickly sliced
- 4 carrots cut into 2" chunks
- 1 bulb of fennel, tops removed, and cut into wedges

- 12 oz. cream cheese
- 1 Tbsp. mayonnaise
- 1 Tbsp. lemon juice
- 2 Tbsp. worchestershire sauce
- 1 sm onion, minced (more if desired)
- 1/2 cup chili sauce
- 1/2 cup seafood cocktail sauce
- 12 oz. crab meat
Greek Style Oil & Vinegar Dressing

- 1 clove garlic, finely chopped

- 2 Tbsp. olive oil
- 4 large leeks, cut into 1/4-inch thick slices (about 2 lb.)
- 4 large russet potatoes, peeled, cubed (about 4 cups) 1-1/4 qt. (5 cups) water
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 pkg. (8 oz.) philadelphia cream cheese, cubed
- 1/2 cup milk
- 1/4 cup chopped fresh chives
- 1/2 cup milk
- 1/4 cup chopped fresh chives
Dark Chocolate Truffles

- 6 oz. high-quality dark chocolate (60% cocoa), finely chopped
- 1/4 cup walnut, almond or canola oil
- 1/2 cup unsweetened cocoa
- 1/2 cup chopped nuts
Greek Taco Dip

- 3 6" pita breads
- 1/2 tsp. garlic powder
- 1 8 oz. cream cheese w/chives
- 1 8 oz. hummus
- 1 cucumber, chopped & seeded
