Grilled Shrimp with Cilantro Dipping Sauce Recipe

Directions In a large resealable plastic bag, combine the cilantro, oil, chives and garlic
- DIPPING SAUCE:
- 2 tablespoons minced fresh cilantro
- 2 tablespoons olive oil
- 1 tablespoon minced fresh chives
- 1 garlic clove, minced
- 1 pound uncooked medium shrimp, peeled and deveined
- 1 cup fresh cilantro leaves
- 1 cup fat-free mayonnaise
- 1 jalapeno pepper, seeded
- 1 garlic clove, peeled
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- Dash cayenne pepper
Mexican Bean Salad

- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (10 ounce) package frozen corn

- 2 tablespoons fresh lime juice
- 1 tablespoon lemon juice
- 2 tablespoons white sugar
- 1 tablespoon salt
- 1 clove crushed garlic
- 1/4 cup chopped fresh cilantro
- 1/2 tablespoon ground cumin
- 1/2 tablespoon ground black pepper
- 1 dash hot pepper sauce
- 1/2 teaspoon chili powder
Pork Fried Rice

Mix together 2 tablespoons of soy sauce with the eggs and beat well
- 2 tablespoons oil
- 2 eggs
- 4 tablespoons soy sauce
- 1 clove garlic, minced
- 1/2 lb of ground pork, or 1/2 lb bacon cho9pped
- 2 carrots, shredded
- 1/2 cup frozen peas (optional, I do not like peas so I usually leave them out )
- 2 cups cooked rice
- 2 tablespoons rice vinegar
Pesto Tortillini with Scallops ( I use Shrimp)

- 3/4 lb. scallops or shrimp
