Cajun Pot Roast ( Crock Pot)

Combine spices. Put roast in crock pot
- Crock Pot Cajun Roast1 roast of your choice (2 – 2 1/2 pounds)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 2 cups corn
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 tomato diced
- Rice to serve

- 2 slices fresh white bread
- 1/4 cup milk
- 3 tablespoons clarified butter, divided
- 1/2 cup finely chopped onion
- A pinch plus 1 teaspoon kosher salt

- 6 medium-large ripe tomatoes
- 1 large sweet onion
- a handful of fresh cilantro
- juice of 1 fresh lime OR 1/2 fresh lemon
- 2-3 fresh jalapeno peppers
- salt to taste, optional
Surprising Carrot Cake

Preheat oven to 350.Grease and flour 2 (9") round baking pans
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 3 eggs
- 1 1/2 cups sugar
- 3/4 cup mayo
- 1 can (8oz.) crushed pineapple, undrained
- 2 cups coarsely shredded carrots
- 2 cups coarsely chopped pecans

- For the filling::
- 1 cup light vegetable broth
- 1 tablespoon arrowroot starch dissolved in a little cold water
- 1 generous cup chopped roasted green chilies- hot or mild
- 2-3 cloves garlic, minced
- 1 teaspoon cumin or chili powder, hot or mild, to taste
- 1 15-oz can organic black beans, rinsed, drained
- 3-4 cloves garlic, minced
- Fresh lime juice from 1 big juicy lime
- 2 heaping cups cooked sweet potatoes, smashed a bit, but still chunky [I cube mine, then soften just a little]
- 1/2 cup chopped roasted green chilies
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder, or curry, mild or spicy, as you prefer
- Sea salt and black pepper, to taste
- 2 tablespoons chopped fresh cilantro
- To Assemble::
- 2-4 tablespoons light olive oil or vegetable oil, as needed

- Shredded Monterey Jack cheese, or vegan cheese, if desired

- 1/4 1/4 1/4 cup sliced green onions
- 1 1 1 cup cubed ham and/or cooked Italian sausage
- A few slices cooked bacon, chopped
- 1 1 1 teaspoon herbes de provence, or other dried herbs, or a Tbsp of fresh chopped herbs such as basil, rosemary, or thyme

- Juice of 1/2 lemon
- 1 tablespoon hot sauce
- 1/2 yellow onion, sliced
- 5 sprigs fresh thyme
- 3 cloves garlic, smashed
