- 1 lb ground beef
- cup bread crumbs
- 1 egg
- 1 tsp seasoned salt or herb seasoning mix
- 1 cup meatless spaghetti sauce
- grated mozzarella cheese

No Bake Cookies

Bring first four ingredients to a boil and cook 1 minute
- 2 cups sugar
- 1 cup butter
- 1/2 cup milk
- 4 tablespoons cocoa
- 1 teaspoon vanilla extract
- 3 cups instant oatmeal
- 2/3 cup peanut butter
Creamed Spinach with Bacon Recipe

In a large skillet, cook the onions and bacon in butter over medium heat until bacon is crisp
- 1 large onion, finely chopped
- 4 green onions, finely chopped
- 4 bacon strips, diced
- 2 tablespoons plus 2 teaspoons butter
- 1 garlic clove, minced
- 1/2 cup all-purpose flour
- 1-1/4 teaspoons salt
- 1/4 teaspoon pepper
- 2-1/2 cups milk
- 3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 1/2 cup half-and-half cream
French Toast

- 3 eggs
- 1/4 cup milk
- 1 tbs. sugar
- 1/2 tsp. vanilla
- 1/4 tsp. nutmeg
- 1/8 tsp. salt

Grilled Vegetable Platter

In a small bowl, combine the oil, honey, 1 tablespoon vinegar, oregano and garlic powder
- 1/4 cup olive oil
- 2 tablespoons honey
- 1 tablespoon plus 1/2 teaspoon balsamic vinegar, divided
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 pound fresh asparagus, trimmed
- 3 small carrots, cut in half lengthwise
- 1 large sweet red pepper, cut into 1-inch strips
- 1 medium yellow summer squash, cut into 1/2-inch slices
- 1 medium red onion, cut into four wedges
- 1/8 teaspoon pepper
- Dash salt

- 1/3 cup sugar
- 2 tbs. oil

Creamy Potato Salad with Grilled Scallions

Bring a medium pot of salted water to a boil over medium heat
- 1 pound red potatoes, cut in to 1-inch cubes
- 1 bunch scallions, washed
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon spicy brown mustard
- 1 teaspoon chopped garlic
- 1/2 teaspoon kosher salt
- Pinch freshly ground black pepper
Salmon with Summer Tomato Salsa

1. Preheat oven to 325 degrees
- 4 (4 ounce) fillets salmon, skin removed
- 1 cup chopped fresh tomato
- 1/2 Hass avocado, chopped
- 1 garlic clove, crushed
- 1 Tbsp balsamic vinegar
- 1 tsp olive oil
- 1/2 cup cooked corn kernels
- 1/4 cup minced red onion
- 1/4 cup chopped fresh cilantro
- salt and pepper, to taste
- 1 lime, cut in wedges
Creamy Baked Chicken Taquitos

Preheat the oven to 425 degrees and spray a baking sheet with cooking spray
- 3 oz cream cheese, softened (reduced fat is fine)
- 1/3 cup salsa verde
- juice of 1/2 a lime
- 1 tsp chile powder
- 1/2 tsp ground cumin
- pinch cayenne pepper
- 1/2 tsp onion powder
- 3 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 3 Tbs chopped scallions
- 2 cups cooked and shredded chicken *
- 1/2 cup shredded extra sharp cheddar cheese
- 1/2 cup shredded Pepperjack cheese
- 8-12 (6-inch) corn tortillas

Hudson's Baked Tilapia with Dill Sauce
