Soak the oats in milk for about one hour
- 1 cup old fashion rolled oats (not instant)
- 1 cup non-fat milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. sugar
- raisins or nuts (optional)
Fudge Marble Pound Cake

Heat oven to 325°F. Grease and flour 12-cup fluted tube cake pan, or spray with baking spray with flour

- cup vegetable oil

- cup powdered sugar
- 1/4 1/4
- cup unsweetened baking cocoa

- cup Betty Crocker® Rich & Creamy chocolate frosting
Lemon Tart Filling

INSTRUCTIONS: In a heavy bottom saucepan or double boiler place Eggs and Sugar and combine well
- INGREDIENTS:
- Lemon Tart Filling
- 8 Large Egg Yolks 1 Large Egg 1C Sugar 4- Large Lemons Zested (If small 6) 4- Large Lemons Juiced (about 3/4 C Juice) 1/4 t Real Salt 1/2 Stick Unsalted Butter Cut into pieces 1/4 C Heavy Cream well chilled
Fresh Apple Cake ( Gandma Smitherman's Recipe)

- 3 cups flour
- 2 cups sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- Mix all together in a large bowl, then make a hole in the center of ingredients.
- Add 1 1/4 cups oil
- 3 cups chopped fresh apples
- 3 eggs
- 1 cup nuts, chopped
- 2 tbs. vanilla
- Mix ingredients all together and pour into tube pan.
- Bake 1 hour at 350.
Quinoa Chicken Salad

Chill all ingredients and combine
- 2 cups cooked chicken, cubed
- 1-cup mayonnaise
- 1-cup quinoa, cooked (basic recipe)
- salt (to taste)
- 1-cup celery, diced paprika 1/4 cup
- walnuts, chopped
Pumpkin Pie Filling ( This is a great recipe)

In large bowl beat all ingredients except for the pumpkin
- 2 eggs
- 1/2 cup brown sugar
- 1 cup heavy cream
- 1 tsp. cinnamon
- 2 tsp. pumpkin pie spice
- Pinch of salt
- 2 cups canned pumpkin
Chili Cornbread Bake

Cook ground beef until done
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 4 eggs
- 1- 14 3/4 ounce cream style corn
- 1 cup milk
- 2 tablespoons oil
- 1 lb ground beef
- 1 1/2 cups shredded cheddar cheese
- 1- 4 ounce can chopped green chilies

- 1 cup sugar
- 1 cup water
- 2 tbs. corn starch
- 1/2 box strawberry Jello
- Cool Whip

Biscuits

Preheat the oven to 475°
- Active Time: 30 Minutes
- Total Time: 1 Hour
- Makes 6 biscuits
- 2 cups all-purpose flour plus more for dusting
- 1 teaspoon kosher salt
- 1 tablespoon plus 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons chilled solid vegetable shortening
- 5 tablespoons unsalted butter (3 tablespoons thinly sliced, 2 tablespoons melted)
- 1 cup buttermilk
Black Bean Burgers

- ¾ cup panko
- 3 tbsp. plus 2 tsp. olive oil, divided
- 2 (15 oz.) cans black beans, drained and rinsed, divided
- 2 large eggs
- 1 tsp. ground cumin
- ½ tsp. salt
- ¼ tsp. cayenne pepper
- 1 red bell pepper, stemmed, seeded and finely diced
- ¼ cup fresh cilantro, minced
- 1 shallot, minced
