Cranberry Broccoli Salad Recipe

In a large salad bowl, combine the broccoli, onion, cranberries and bacon
- 4 cups fresh broccoli florets
- 1/2 to 3/4 cup thinly sliced red onion
- 1 cup dried cranberries
- 1/3 cup crumbled cooked bacon
- 1/2 cup mayonnaise
- 1/2 cup half-and-half cream
- 3 tablespoons sugar
Chicken and Broccoli Casserole

Place chicken breasts in a small saucepan with a lid
- 12 oz chicken breasts, boneless and skinless, poached, and cubed into 1/2 inch squares
- 2 T all purpose flour
- 2 T butter, unsalted
- 10 oz skim milk
- 1 pinch white pepper
- 1 t Italian seasoning
- 1 T parmesan cheese, grated
- 7 oz penne pasta, whole wheat
- 2 yellow or orange bell peppers, chopped
- 1 zucchini, chopped
- 2 heads, approx. 12 ounces broccoli, chopped
- 1/3 c monterey jack cheese
- nonstick cooking spray

- 1/4 cup packed cilantro leaves

Double Chocolate Fondue Recipe

In a small saucepan, combine sugar and 1 can milk
- 1 cup sugar
- 2 cans (5 ounces each) evaporated milk, divided
- 1/2 cup baking cocoa
- 4 ounces unsweetened chocolate, chopped
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- Cubed pound cake and assorted fresh fruit
Banana Bread

1. Combine dry ingredients in a large bowl with a whisk, making a well in the center
- Ingredients:
- 1 loaf
- 1 cup whole wheat flour
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup sugar
- 1 cup mashed banana (about 3 medium bananas)
- 1/3 cup butter, melted
- 2 tablespoons milk
- 2 eggs
- 1/4 cup chopped nuts, optional

- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/8 tsp. salt
- 2 slightly beaten egg whites ( I use 2 whole eggs)

Pork Fried Rice

Mix together 2 tablespoons of soy sauce with the eggs and beat well
- 2 tablespoons oil ( Can use Sesame Oil)
- 2 eggs
- 4 tablespoons soy sauce
- 1 clove garlic, minced
- 1/2 lb of ground pork, or 1/2 lb bacon chopped
- 2 carrots, shredded
- 1/2 cup frozen peas (optional, I do not like peas so I usually leave them out )
- 2 cups cooked rice ( cold rice)
- 2 tablespoons rice vinegar
Oatmeal Buttermilk Muffins with Raisins

1. Combine oats and buttermilk in a small bowl
- Yield:
- A soft oatmeal muffin, sweetened with brown sugar and raisins, with a light and crispy top
- 12 muffins

- 1 cup quick oats
- 1 cup buttermilk*
- 1/2 cup (1 stick) butter, softened
- 1/2 cup brown sugar, packed
- 1 egg
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup raisins
Marbled Nutella Banana Bread
