Chicken Vegetable Casserole ( Healthy)

Place chicken breasts in a small saucepan with a lid
- 12 oz chicken breasts, boneless and skinless, poached, and cubed into 1/2 inch squares
- 2 T all purpose flour
- 2 T butter, unsalted
- 10 oz skim milk
- 1 pinch white pepper
- 1 t Italian seasoning
- 1 T parmesan cheese, grated
- 7 oz penne pasta, whole wheat
- 2 yellow or orange bell peppers, chopped
- 1 zucchini, chopped
- 2 heads, approx. 12 ounces broccoli, chopped
- 1/3 c monterey jack cheese
- nonstick cooking spray
Quinoa Vegetable Soup

Sauté quinoa, carrots, celery, onions, green pepper and garlic in oil until golden brown
- 4 cups water
- 2 cloves garlic, chopped
- 1/4 cup quinoa
- 1 Tbs safflower oil
- 1/2 cup carrots, diced
- 1/2 cup tomatoes, chopped
- 1/4 cup celery, diced
- 1/2 cup cabbage, chopped
- 2 Tbs onions, chopped
- 1 tsp salt
- 1/4 cup green pepper, diced parsley, chopped
Chocolate Frosting for Surprise Cookies

Use this frosting with Surprise Cookies
- 2 cups confectioners' sugar
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled
- 1/4 cup cocoa powder
- 1/4 cup milk
- 1/4 teaspoon pure vanilla extract
Oven-Fried Chicken Chimichangas

Directions Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions
- 2/3 cup picante sauce or 2/3 cup your favorite salsa
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano leaves, crushed
- 1 1/2 cups cooked chicken, chopped
- 1 cup shredded cheddar cheese
- 2 green onions, chopped with some tops ( about 1/4 cup)
- 6 (8 inch) flour tortillas
- 2 tablespoons margarine, melted
- shredded cheddar cheese, for serving
- chopped green onions, for serving
- picante sauce, for serving
Banana Cream Pie Recipe

Directions In a saucepan, combine sugar, flour and salt; stir in milk and mix well
- 3/4 cup sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks, lightly beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 pastry shell (9 inches), baked
- 3 medium firm bananas
- Whipped cream and additional sliced bananas
Mexican Dump Recipe

- Optional Ingredients:
- 1 pound ground beef
- 1 can corn
- Taco seasoning
- 1 box corn bread
- 1 package shredded cheddar cheese
- Chopped bell pepper

- Grilled chicken breast (can use Italian Dressing to season with)
- sliced Swiss or Provolone cheese
- Lettuce and tomato (optional)
- Pesto alone or with Mayo
- Black olives (optional)

BBQ Pork Sandwiches

Preheat oven to 325. Mix the dry rub ingredients in a small bowl
- 2 tbs. salt
- 2 tbs. black pepper
- 2 tbs. dark brown sugar
- 2 tbs. paprika
- 1/2 tbs. cayenne
- 4 lb. shoulder pork roast
- 2 cups apple juice
- 1 cup apple cider vinegar
- 2 tbs. Worcestershire sauce
- 1/2 tbs. liquid smoke
- 1/2 tbs. garlic powder
- 6 soft hamburger buns with seeds
- BBQ sauce
- Cole Slaw

- 1/4 tsp. oregano
