Chinese Sundaes

Combine all ingredients except chicken pieces
- 3 cups chicken pieces
- 2 c. chicken broth
- 3 Tbs. cornstarch mixed with 4 Tbs. cold water
- 1 cu. sliced carrots
- 1/2 tsp. basil
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 can cream of chicken soup
- Chow Mein noodles (optional)
- Toppings to be added when serving (see below)
Chicken Pot Pie with Cheddar Pastry

In a large sauce pan combine 1 cup broth, onion, celery, and carrot
- recipe cheese pastry:
- 1 1/2 cup chicken broth
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup sliced carrot
- 1/4 cup flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups cooked chicken
- 2 Tablespoons sniped parsley

- 3 cups pureed peaches
- 1/3 cup canned pineapple
- 1/2 cup applesauce
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Chicken Enchiladas

Spread the tortillas with filling
- Mix together to form sauce:
- 2 cans cream of chicken soup
- 1 pint low-fat sour cream OR 8 oz. non-fat plain yogurt
- Mix with 1/2 cup sauce to form filling:
- 2 c. chicken pieces
- 2 (4 oz) cans mushrooms, drained
- 1 (4 oz) can green chilies, drained
- 1 cup chopped onion (saute)
- 1 tsp. chili powder (optional)
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper
- 10 flour tortillas
- 1 1/2 cups grated cheddar cheese
Super Moist Chocolate Mayo Cake

Preheat oven to 350° F. Blend all ingredients
- 1 box chocolate cake mix
- 1 cup mayonnaise
- 1 cup water
- 3 eggs
- 1 teaspoon ground cinnamon (optional)
Mediterranean Shrimp Salad

A simple, make-ahead salad that's perfect for patio entertaining
- Dressing:
- 1 lb. farfalle pasta, cooked "al dente", drained
- 1 lb. cooked and peeled large shrimp, tails removed
- 15 oz. can artichoke hearts, coarsely chopped
- 4 oz. feta cheese, crumbled
- 4 oz. kalamata olives, coarsely chopped
- 1/2 c. olive oil
- juice and zest of 1 large lemon
- 2 cloves garlic, minced
- 1 t. fennel seeds or 2 tablespoons chopped fresh fennel fronds
- 1/2 c. fresh mint leaves, chopped
- 1 t. kosher salt
- 1/2 t. ground black pepper
- Garnish: mint leaves, lemon zest
