Carrot Salad

Grate the carrots. Add remaining ingredients and mix
- 1/4 cup Miracle whip
- 1 tsp sugar
- 3/4 cup raisins
- 2 pounds carrots grated
- 1 Tbsp oil
Cranberry Relish

Chop berries and oranges in a meat grinder (I use kitchenaid stand mixer attachment)
- 2 bags fresh cranberries
- 2 whole oranges
- 1/2 cup sugar
- 2 Tbps Grand Mariner
Chicken in Orange Sauce

Heat the olive oil in a large nonstick skillet, then add the chicken
- 4 boneless, skinless chicken breasts, trimmed and
- pounded to 1/4" thickness between 2 sheets
- of waxed paper
- 3 tablespoons olive oil
- 4 tablespoons brandy
- 1-1/4 cups orange juice
- 3 scallions, chopped
- 2 teaspoons cornstarch
- 1 tablespoon water
- 6 tablespoons plain yogurt
- Salt and freshly-ground black pepper to taste
- Cooked long-grain rice
- Orange zest (long slivers of orange peel)
Chocolate Chip Cookies

Preheat oven to 375 degrees
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup butter
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 3 tsp vanilla extract
- 2 eggs
- 2 cups chocolate chips
FETTUCCINE ALFREDO

- 2 Cups heavy cream
- 2 egg yolks beaten
- 2 Cups grated fresh parmesan cheese

Grassick Scottish Plum Pudding

From the family in Scotland
- 1 cup bread crumbs
- 1 cup raisins
- 1 Tbp dark molasses
- 1 tsp ginger powder
- 1 egg beaten
- 1/2 cup sugar
- 1 cup flour
- 1 jar minced meat
- 1 tsp baking soda
- 3 tsp cinnamon
- 1 cup milk
- 3 Tbp brandy
Buttercream Icing

- 2 cups veg shortening
- 7-8 cups sifted confectioners sugar
- 2 tsp clear vanilla extract
- 4 - 6 Tbp milk
Chateaubriand Sauce

Dissolve the cornstarch in the wine
- 1 cup brown gravy
- 1 cup red wine
- 1/2 cup butter
- 3 Tbp lemon juice
- 1 shallot minced
- 1 tsp cornstarch
- 1/2 tsp chopped parsley
- salt and pepper to taste
Chicken with a Madiera-Orange Sauce

1. Sprinkle the chicken with the salt and pepper, then dredge in the flour
- 6 boneless, skinless chicken breasts, trimmed and
- pounded to 1/4" thickness between 2 sheets
- of waxed paper
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup flour, for dredging
- 1 cup madiera wine
- 1/4 cup orange juice
- 2 tablespoons butter
- 2 teaspoons vegetable oil
- 1-1/2 cups chicken broth
- 1/2 Cup whipping cream
- 1/8 teaspoon Orange zest (long slivers of orange peel)
Corn Souffle

Heat oven to 375o. Combine the corn, salt, garlic, green onions and sugar
- 2 cups cooked corn
- 2 cups whole milk
- 1 tsp salt
- 1 tsp sugar
- 2 Tbp cornstarch
- 4 eggs beaten
- 4 Tbp butter melted
- 1 green pepper sliced
- 1/4 cup chopped green onions
- 1 tsp garlic powder or mincend garlic
