Flounder with Garlic and Apples

1. In a skillet over medium-high heat, sauté the garlic in the oil
- 3 cloves garlic, minced
- 1 red delicious apple, peeled, cored, and chopped into 1/2" dice
- 2 tablespoons sugar
- 2 cups dry white wine
- 2 flounder fillets
- 1/4 teaspoon thyme
- 1/4 teaspoon tarragon
- 2 Tbp olive oil
Apple Crisp

Preheat oven to 375 degrees F
- 6 cups sliced apples
- 2 Tbp sugar
- 3 Tbp brown sugar
- 1/2 tsp salt
- 1 cup soften butter
- 1 1/3 cups sugar
- 1 1/2 cups flour
- 1 1/2 tsp cinnamon
- 1 tsp lemon peel
Shrimp Pops with Peanut Sauce

Soak bamboo shewers for 1 hour in water before grilling
- Pops:
- 1 pound ground pork
- 3/4 pound raw shrimp peeled and deveined
- 1/2 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1/4 cup panko bread crumbs
- 1 Tbp soy sauce
- 1 tsp ground ginger
- 1/4 cup chopped green onion
- 1/2 tsp fresh ground pepper
- 1 Tbp chopped garlic
- Sauce:
- 1 cup unsweetened coconut milk
- 1/2 cup peanut butter
- 2 tsp grated lime zest
- 4 Tbp fresh lime juice
- 1 Tbp soy sauce
- 1 Tbp brown sugar
- Sriracha to taste
- 1/2 tsp ground ginger
Crepes Suzette

Crepes: With a blender combine the flour, sugar, eggs, milk, Grand Marnier, and butter
- Crepes:
- 1 1/4 cups flour
- 4 eggs
- 1/4 cup Grand Marnier
- 2 Tbp butter clarified
- 3 Tbp sugar
- 1 3/4 cups whole milk
- 1/4 tsp baking powder
- Sauce:
- 6 Tbp sugar
- juice of 2 large oranges
- 1 Tbp sugar
- 2 Tbp dark rum
- 1/4 tsp lemon juice
- 1/2 cup butter
- 1/4 cup Grand Marnier
honey roasted carrots

Preheat oven to 400°F with rack in middle
- 3/4 pound carrots, peeled
- 3/4 pound parsnips, peeled
- 1/4 cup extra-virgin olive oil
- 3 1/2 tablespoons honey, divided
- 1 1/2 tablespoons fresh lemon juice
- 1/8 teaspoon cayenne pepper
- 8 leafy sprigs fresh thyme
- coarse sea salt
Marsala Sauce

In a small sauce pan mix all the ingredients together
- 1 can golden pork gravy
- 2 cups fresh chopped mushrooms
- 1/4 cup white wine
- 1/2 tsp garlic powder or minced garlic
- salt and pepper to taste
- 3 Tbp chopped green onions
Clam Dip

- 1 Sleeve plain ritz crackers
- 10 Tbp butter
- 3 tsp oregano
- 3 tsp fresh ground pepper
- 1 small spanish onion
- 1 can chopped clams and juice
- 1/2 cup romano cheese grated
Frisky Shrimp

With zester or sharp knife, cut lemon peel into thin strips and set aside
- 1 clove garlic minced
- 3 tbsp butter
- 2 cups cooked rice
- Dash hot pepper sauce
- 1/4 tsp salt
- 1/4 cup southern comfort
- 1/4 cup toased almonds
- 1 7.5oz can tomatoes chopped
- 1/4 tsp dried basil crushed
- 3 onions sliced into 1" lengths
- 3/4 pound large shelled shrimp
- 1/2 lemon juice and zest
Crab Ragoons

In a sauce pan heat up the cooking oil
- 1 8oz cream cheese
- 2 Tbp horseradish
- 1/2 lbs crab meat
- 2 garlic cloves chopped
- Wonton skins
- Cooking oil to deep fry
Roasted Garlic Sauce

Squeeze the garlic pulp from the clove skins, and coarsely chop
- 2 heads roasted garlic
- 1/2 cup Steak Sauce (like A1)
- 1/4 cup dry red wine
- 1/4 cup onion, finely chopped
