Preheat oven to 450. Prick potatoes several times with a fork and place directly on oven rack
- For hamburger mixture:
- 3 large russet potatoes
- 1 tbsp olive oil
- 1/2 lb lean ground beef or turkey
- 1 tbsp ketchup
- 1 tsp Worcestershire Sauce
- 3 tbsp tomato paste
- 1/4 cup green puree
- 1 tbsp oat bran
- 1/4 tsp salt
- fresh ground pepper to taste
- For the potato:
- 1 tbsp unsalted butter
- 2 tbsp plain low fat yogurt
- 1/4 tsp salt
- 3 slices American cheese, for optional variation
