Apple Cake with Cranberrries

Preheat oven to 350 degrees F
- Dry ingredients:
- 1 cup sorghum flour
- 1/2 cup buckwheat flour or almond flour
- 1/4 cup tapioca starch or potato starch (not potato flour!)
- 1 teaspoon xanthan gum
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1 cup organic light brown sugar, packed
- Wet ingredients:
- 1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water
- 1/2 cup light olive oil
- 1/2 cup applesauce
- 1/2 cup rice milk or coconut milk
- 1/4 teaspoon lemon juice or light tasting rice vinegar
- 2 tablespoons raw organic agave (or honey, if not vegan)
- 2 teaspoons bourbon vanilla
- Add-ins:
- 2 rounded cups chopped apples
- 1/2 cup fresh or thawed frozen cranberries, halved or chopped
- Topping:
- Sprinkle of raw sugar
Baked Mac & Cheese Cupcakes

Preheat the oven to 375 degrees F
- Vegetable cooking spray
- 2 cups dried bread crumbs, divided
- 1 tablespoon olive oil, plus extra for drizzling
- 8 ounces ground turkey or chicken, preferably dark meat
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/4 teaspoon freshly ground black pepper, plus extra for seasoning
- 8 ounces small pasta, such as pennette, shells, or elbows
- 2 cups grated Parmesan
- 1 1/2 cups grated white Cheddar
- 1 cup cherry tomatoes, quartered
- 2 cups chopped broccoli, blanched,* see Cook's Note
- 1 pound asparagus, cut into 3/4-inch pieces, blanched
Moroccan Fish

1. Heat broiler. Line a rimmed baking sheet with nonstick foil
- 1 lb frozen fish fillets or steaks
- 4 tsp olive oil
- 1 ⁄4 tsp pepper
- 1 cup chopped onion
- 2 tsp minced garlic
- 1 ⁄2 tsp ground cumin
- 1 ⁄4 tsp cinnamon
- 1 can (14 to 15 oz) diced tomatoes
- 1 ⁄4 cup pitted Kalamata or other olives, halved
Spinach and Cheese Quiche

- 1 GF pie crust
- 1 (12oz) can evaporated fat free milk
- 1/3 cup low fat cottage cheese
- 1/4 cup grated Parmesean
- 2 large eggs
- 3 large egg whites
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 (10oz) package frozen chopped spinach thawed
Creole Pork Chops

In large skillet brown chops on either side untiil golden brown
- 4 thick pork chops
- Salt and pepper to taste
- 1/2 cup water
- 2/3 cup ketchup
- 2 Tbsp chopped green onion
- 1/2 cup sliced mushrooms
- 1/3 cup sliced green pepper
- 1/4 tsp Tabasco
- 1 Tbsp Worcestershire
- 1 tsp sugar
Kentucky Back Ribs

Place ribs in a large, shallow roasting pan
- Marinade:
- 4 lbs pork back ribs
- 1 (12oz) bottle dark beer
- 3/4 cup brown sugar
- 1/2 cup cider vinegar
- 1/2 Tbsp chili powder
- 1/2 Tbsp dry mustard
- 1 tsp salt
- 1 tsp red hot pepper flakes
- 3/4 cup ketchup
Macaroni and Brie with Crab

1. Preheat oven to 350 degrees F
- Nonstick cooking spray
- 1 medium sweet onion, halved and thinly sliced
- 5 Tbsp. butter
- 1 lb. dried medium shell pasta
- 1/3 cup all-purpose flour
- 3/4 tsp. salt
- 1/2 tsp. ground black pepper
- 3 cups milk
- 1 lb. Brie cheese, trimmed and chopped (reserve 8 small wedges for topping, if desired)
- 2 6- to 6.5-oz. cans lump crabmeat, drained, flaked, and cartilage removed
- 3 slices firm white bread, torn into large pieces
