1. In a 3-1/2- or 4-quart slow cooker, stir together chicken, undrained tomatoes, soup, and corn
- 1 lb. skinless, boneless chicken breast halves, cut into 1/2-inch pieces
- 2 14.5-oz. cans Mexican-style stewed tomatoes
- 1 10.75-oz. can condensed nacho cheese soup
- 1 10-oz. pkg. frozen whole kernel corn (2 cups)
- Shredded Mexican-style or cheddar cheese
Apple Latkes

Nut-Free, Soy-Free
- Vegetable oil for frying
- 2 eggs
- 2 cups flour, any flour, or quick oats, a little more if needed
- 6 large apples, mackintosh would be best, unpeeled and grated coarse
- 1/2 cup sugar or sucanat
- 1/2 cup golden raisins, optional
- 3 tbsp rum or brandy
- 1 tablespoon cinnamon
- 1 tablespoon lemon zest
- Pinch nutmeg

Preheat oven to 450°F. Whisk the eggs, Silk and melted butter in a medium bowl
- 3 large eggs
- 1 cup Silk Unsweetened, Original or DHA Omega-3 & Calcium
- 2 Tbsp. unsalted butter, melted
- 1/2 cup flour
- 6 Tbsp. whole wheat flour
- 1/2 tsp. salt
- Additional melted unsalted butter or canola oil for greasing the pan

If you would prefer to make mini muffins, decrease the baking time by at least half
- 1 cup rice bran (be sure to use a certified gluten-free brand – there aren’t many, but there is one)
- 1 cup all-purpose gluten-free flour (I use Better Batter)
- 1/2 teaspoon xanthan gum (omit if using Better Batter)
- 1/4 cup sugar
- 1/2 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4 tablespoons unsalted butter, at room temperature
- 4 tablespoons honey
- 1 tablespoon unsulphured molasses
- 3 extra-large eggs, at room temperature
- 1 1/4 cups sour cream (or 1 cup buttermilk) (or 1 cup milk mixed well with 1 tablespoon white wine vinegar)
- 3/4 cup dried fruit tossed with 1/2 teaspoon all-purpose gluten-free flour (fruit with flour optional)

In a medium bowl combine all-purpose flour, cocoa (sift this in to get rid of lumps), baking powder and salt
- 1 cup butter (2 sticks), melted
- 2 cups granulated sugar
- 2 teaspoons pure vanilla extract
- 4 large eggs, room temperature
- 4.5 ounces (1 cup) all-purpose flour (I always weigh my flour when baking)
- 3/4 cup cocoa
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup Nutella
- 1/2 cup peanut butter
