In a saucepan, bring millet and broth to a boil
- 1/4 cup uncooked millet, rinsed and drained
- 3/4 cup vegetable broth
- 2 medium sweet red peppers
- 1/3 cup frozen corn, thawed
- 1/4 cup finely chopped onion
- 3 tablespoons finely chopped celery
- 2 tablespoons chopped walnuts
- 1 green onion, finely chopped
- 1-1/2 teaspoons chopped fresh mint or 1/2 teaspoon dried mint flakes
- 1 teaspoon shredded lemon peel
- 3/4 teaspoon fresh chopped oregano or 1/4 teaspoon dried oregano

- 1/2 cup frozen cubed hash brown potatoes, thawed

Tater Tot Grilled Cheese

we used a waffle iron to fuse a whole bunch of tater tots into a delicious crispy potato “bread”
- 1 1 20 bag frozen tater tots, thawed (you will need 20 ounces or more, depending on the size of your waffle maker)

- 4 4 6 1/2 6 slices of cheddar or American cheese (or 1/2 cup shredded cheddar cheese)

- 7-inch a 7-inch classic waffle iron on high.
- to the process to make a second tater tot waffle. When the second waffle is crisp, top it with half of the cheese, the cooked bacon, and the sliced green onions. Top that with the remaining cheese, and place the first waffle on top.
