Pickled Beets

Drain beets, saving the juice
- 6 bunches beets (boiled and sliced)
- 1 1/2 cups beet water(from boiling)
- 1 vidalia onion (sliced)
- 1 cup sugar
- 2 cup vinegar
Vegetables-Asparagus Rafts

Heat grill to high heat. Snap off tough ends of asparagus
- 16 thick asparagus spears (about 1 pound)
- 1 TBSP low-sodium soy sauce
- 1 tsp dark sesame oil
- 1 garlic clove, minced
- 2 tsp sesame seeds, toasted
- 1/4 tsp black pepper
- Dash of salt
Sangria

Combine all ingredients EXCEPT soda
- 1 Bottle of Burgundy wine
- 1 Lemon cut into wedges
- 1 Orange cut into wedges
- 2 Shots of Cointreau
- 2 Shots of Brandy
- 1 Large can of diced pineapples (with juice)
- 1 can ginger ale
- 1 can sprite
Sangria

- 1 liter of Burgundy wine
- 1 Lemon cut into wedges
- 1 Orange cut into wedges
- 2 Shots of Cointreau
- 2 Shots of Brandy
- 1 Large can of diced pineapples (with juice)
- 1 can ginger ale
- 1 can sprite
Big Joe’s Big Pork Chops with Peach Bourbon Mustard Sauce [Recipe]

Pre-heat oven to 225 degrees for long method or 325 if you want the shorter method
- 5 large pork chops
- 2 cups of frozen peaches (thawed, chopped in blender or food processor)
- 1/2 cup of maple syrup
- 1 cup of peach jam
- 1/2 cup of bourbon
- 4 tablespoons of unsalted butter
- 3 cloves of garlic
- 3 tablespoons of finely minced shallots
- 1 cup of grain mustard
- 3 tablespoons of Olive oil
- 3 tablespoons of apple cider vinegar
- salt and freshly ground pepper

- 1 lb ground beef
- 1/2 med onion, diced
- 1 tsp minced garlic
- 1 can whole kernel corn, drained
- 1 can diced tomatoes, undrained
- 1 medium zucchini, halved and sliced
- 1 28 oz can tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 c grated Parmesan cheese

Prepare grill by oiling grates and heating to high heat
- 2 TBSP grated orange rind
- 3/4 c fresh orange juice
- 1/2 c fresh lime juice
- 3 TBSP honey
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp crushed red pepper
- 2 red onions cut into 4 wedges
- 4 zucchini, each halved lengthwise
- 4 yellow squash, each halved lengthwise
- 3 TBSP thinly sliced fresh basil

- 4 cans navy beans (do not drain)
- 1 package of bacon diced
- 1 med onion, finely diced
- 3 tablespoons molasses
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dry mustard or 1/4 TBSP of prepared
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup brown sugar

Preheat oven to 400 degrees
- Nonstick cooking spray
- 1 1/4 cups all-purpose flour (spooned and leveled)
- 1/2 cup packed dark-brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon coarse salt
- 1 cup old-fashioned rolled oats
- 1/2 cup raisins
- 3 tablespoons extra-virgin olive oil
- 1 large egg
- 1/3 cup skim milk
- 4 medium carrots, shredded
- 1 medium ripe banana, mashed

- 1 lb. dried fettuccine
- 1 ⁄2 lb. unsalted butter (2 sticks)
