Deviled Eggs

Place eggs in a small saucepan, place eggs and cover with water
- 6 eggs
- 1/4 cup mayonnaise
- 1 tsp white vinegar
- 1 tsp yellow mustard
- salt & black pepper (to taste)
- paprika (optional)
Rocky Road Trippers

Preheat oven to 350 degrees
- 8 oz semi-sweet chocolate chips
- 4 oz unsweetened chocolate
- 1/2 cup unsalted butter
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 eggs
- 1 1/2 cups sugar
- 2 tsp vanilla extract
- 1 cup mini marshmallows
- 1 cup chopped pecans
- 1 cup milk chocolate chips
Homemade Pizza

Makes two large 8-slice pizzas
- Mama Mary's Thin Crust Pizza Crust (or generic brand)
- Hill Country Fare Traditional Pizza Sauce (15 oz jar)
- HEB Pizza Blend Cheese (2 bags)
- HEB Low-Fat Pepperoni slices
- (Other vegetables or no meat -- however you prefer)
Shrimp & Pesto Gnocchi

Bring large pot of salted water to boil on high
- 1 lb shrimp (deveined)
- 16 oz gnocchi
- 1/3 cup basil pesto
- 2 TBS Mascarpone
- 1/2 lb cocktail tomatoes (quartered)
- 12 oz bag frozen corn (thawed, drained)
- 2 TBS butter
- 1/4 tsp crushed red pepper
- 1/4 cup grated parmesan
- Olive oil as needed
Beef & Broccoli

In medium pot, combine rice, garlic, salt, and water
- Sauce:
- 1 lb sirloin beef (diced)
- 1/4 cup corn starch
- 1 cup jasmine rice
- 2 garlic cloves (peeled, chopped)
- 1/s tsp kosher salt
- 2 cups water
- 2 green onions (thinly sliced - separate whites from greens)
- 2 TBS olive oil (divided)
- 1 lb broccoli (2 crowns - separated into florets)
- 1/2 lb sweet peppers (thinly sliced)
- 1/3 cup soy glaze
- 2 TBS hoisin sauce
- 1 TBS rice vinegar
- 1 TBS chili paste (sambal oelek)
Frito Pie

Heat 1 TBS olive oil in large stockpot over high heat
- 8 1 or 2 oz bags corn chips (or 16+ oz bag)
- 2 lbs ground turkey
- 2 TBS olive oil
- 1 onion (diced)
- 10 oz diced tomatoes and green chilies
- 8 oz can tomato sauce
- 12 oz dark beer
- 1 clove garlic (minced)
- 2 TBS chili powder
- 1 tsp ground cumin
- 1/4 tsp cayenne
- 2 TBS cornmeal or masa harina
- Salt to taste
- 1 1/2 cups grated cheddar
Home Fries

Cut the potatoes: Once the potatoes are washed and scrubbed well, cut into half-inch cubes
- 1 1/2 pounds Russet potatoes (about 3 medium or 2 large potatoes)
- 2 TBS olive oil, divided
- 1 TBS unsalted butter
- 1 medium onion, diced
- 1/2 teaspoon garlic powder
- Salt
- Pepper
Cabbage Stew

In a large skillet, cook beef and onions until beef is no longer pink
- 1 lb ground beef
- 1/2 medium onion (diced)
- 1 head green cabbage (chopped)
- 1 14oz can diced tomatoes
- 1 8oz can tomato sauce
- 3 cups uncooked minute rice
- 3 bay leaves
- 2 - 3 tbs salt
- pepper to taste
Barbecue Bake

Preheat oven to 350 degrees
- 1 lb ground turkey (or beef)
- 1/2 medium yellow onion (diced)
- 2 tsp minced garlic
- 16 oz pkg rotini or mini farfalle pasta
- 1 cup barbecue sauce
- 1/4 tsp pepper
- 3 slices bacon cooked and chopped
- 1/4 cup milk
- 1 tbs butter
- 1 cup shredded cheddar cheese
- 8 oz Velveeta cheese (cubed)
Pizza Bake Supreme

Combine sauce ingredients in a medium saucepan
- Sauce:
- 16 oz rotini pasta
- 29 oz tomato puree
- 1 tsp oregano
- 1/2 tsp basil
- 1/2 tsp sugar
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp marjoram
- 1/4 tsp salt
- 1/4 tsp black pepper
- Toppings:
- 1 lb ground beef (or turkey)
- 1/2 yellow onion (diced)
- 12 oz bag pepper onion blend
- 4 oz mini pepperoni
- 2.25 oz can sliced black olives
- 2 cups shredded mozzarella or pizza cheese
