Chicken Alfredo Penne Al Forno

In large stockpot, Prepare pasta as directed to al dente
- Alfredo Sauce (double for a more saucy dish):
- 16 oz Penne
- 2 cups cooked chicken (diced or shredded) - about two small breasts
- 1 1/2 cups shredded mozzarella (4 oz) (fresh)
- 1 TBS olive oil
- 4 garlic cloves (minced)
- 3 TBS flour
- 1 cup chicken broth
- 1 cup milk
- 3/4 cup grated Parmesan (fresh)
- 1/2 tsp salt
- 1/4 tsp black pepper
Cheddar Bay Biscuits

Preheat oven to 450 degrees
- Biscuits:
- 1 cup baking mix
- 1/8 tsp Old Bay seasoning
- 1/8 tsp onion powser
- 1/8 tsp garlic salt
- 1/8 tsp salt
- 1/8 tsp dried parsley
- 1/3 cup milk
- 1 1/2 oz mild cheddar (shredded)
- Butter sauce:
- 1/4 cup butter (melted)
- 1/4 tsp garlic powder
- 1/4 tsp Old Bay seasoning
- 1/8 tsp dried parsley
Chicken Bacon Ranch Casserole

Preheat oven to 375 degrees
- Alfredo:
- 6 slices thick cut bacon (diced)
- 3 boneless chicken breasts (diced)
- 2 TBS ranch dressing mix
- 12 oz rotini rainbow pasta
- 4 oz shredded mozzarella
- 2 oz cheddar cheese
- 4 TBS butter (sliced)
- 1 1/2 cups almond milk (or regular milk)
- 8 oz Greek cream cheese (or regular cream cheese)
- 1 1/2 cup shredded Parmesan cheese
Ratatouille

Preheat oven to 350 degrees
- 28 ounces whole peeled tomatoes
- 6 TBS extra-virgin olive oil
- 1 large eggplant (1 pound) cut into 1-inch pieces
- Coarse salt and ground pepper
- 2 large yellow onions (1 pound total) diced large
- 3 garlic cloves (smashed and peeled)
- 1 yellow bell pepper (seeded and diced)
- 1 red yellow bell pepper (seeded and diced)
- 2 large zucchini (1 pound total), diced large
- 1 bay leaf
- 1 tsp dried marjoram or oregano leaves
- 2 to 3 TBS red-wine vinegar

- 8 bone-in pork chops
- 1/2 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup vegetable oil
Stuffed Cabbage Casserole

Cook meat until no longer pink
- 1 lb ground beef (or ground turkey)
- 2 tsp olive oil (divided)
- 1 onion (chopped)
- 2 tsp minced garlic
- 1/2 tsp thyme
- 1 tsp Hungarian paprika (or regular paprika)
- 14.5 oz petite diced tomatoes w/ juice
- 15 oz tomato sauce
- 1/4 cup water
- 1 head green cabbage (cut into 1-in pieces)
- salt & pepper (to taste)
- 2 cups cooked rice (brown or white)
- 4 oz shredded mozzarella
Chicken Fried Steak

Preheat oven to 200 degrees
- 3 cups all purpose flour
- 1 tbs salt
- 1 tsp pepper
- 1/8 tsp cayenne pepper
- 1 cup buttermilk (no buttermilk? mix 1 cup of milk with 1 tbs of lemon juice and let set for 5-10 minutes)
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- cube steaks
- 4 - 5 cups vegetable oil

Prepare noodles as directed to al dente
- 6-8 oz oz elbow noodles
- 1 lb ground beef or turkey
- 1 green bell pepper (diced)
- 1 onion (diced)
- 1 tsp minced garlic
- 1 cup water
- 14 oz can diced tomatoes
- 2 TBS chili powder
- 12 oz corn
- 12 oz peas
- 1 tsp salt
- 1/2 black pepper
- 4 oz shredded cheddar
Italian Sausage & Gnocchi

Heat large salted pot of water to boil on high
- 1 lb gnocchi
- 2 crowns (1 lb) broccoli (cut into florets)
- 2 tsp olive oil
- 1 lb hot Italian sausage (ground)
- 2 garlic cloves (chopped)
- 2 TBS tomato paste
- 2 TBS butter
- 2 TBS mascarpone cheese
- 1/4 cup grated pecorino (or Parmesan)
Ravioli / Tortellini Bake

- 19 oz pkg frozen cheese ravioli / tortellini
- 2 cups shredded cheese
- 1 lb ground beef (or turkey)

- 2 ribs celery (diced)

- 28 oz can crushed tomatoes
- 1/4 cup red wine (or water)
- 8 oz mushrooms (diced)
- 1 tsp garlic powder
- 2 tsp basil
- 1 tsp oregano
- 1 tsp salt
