Pretzel Chicken w/ Mustard Cheddar Sauce

Cut chicken breasts in half
- Sauce:
- 2 chicken breasts
- 6 oz salted pretzels
- 1/2 tsp black pepper
- 2 eggs
- 1/2 cup canola oil (for frying)
- 1 TBS butter
- 1 TBS all-purpose flour
- 1 cup milk
- 1 TBS spicy mustard
- 2 cups shredded cheddar
Chicken Enchilada Casserole

Preheat oven to 350 degrees
- 1 large onion (diced)
- 2 ribs celery (diced)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 1/4 tsp minced garlic
- 3 cans chicken (drained)
- 1 10.75 oz can cream of celery soup
- 1 10.75 oz can cram on chicken soup
- 1 10 oz can diced tomatoes and green chiles (undrained)
- 1 tbs chili powder
- 10 6-inch corn tortillas (cut into 1-inch strips)
- 2 cups shredded cheddar cheese
Curry Chicken w/ Zucchini & Jasmine Rice

I'm medium saucepan, combine rice, onion whites, salt, and water
- 4 chicken breasts (skinless, boneless)
- 1 cup jasmine rice
- 1/2 tsp salt
- 2 cups water
- 2 zucchini (halved, cut into 1-inch chunks)
- 1/2 lb yellow and orange peppers (quartered, thinly sliced)
- 2 green onions (sliced, greens and whites separated)
- 1 lime
- 2 TBS tomato chutney
- 1 TBS honey
- 1 1/2 TBS golden raisins
- 2 tsps. Vadouvan curry powder
- Olive oil as needed

- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 2 16oz can jumbo homestyle buttermilk biscuits
- 1 cup firmly packed brown sugar
- 1 1/2 sticks butter (melted)

- 3/4 cup raw cashews
- 1 cup almond milk
- 2 tsp lemon juice
- 4 garlic cloves (smashed)
- 3 TBS yeast flakes (Bragg's)
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/8 tsp nutmeg
- 2 tsp Dijon mustard
- 1 cup hot water

- 12 oz Rainbow Rotini Pasta
- 15 oz can turkey chili w/ beans
- 16 oz jar Thick n' Chunky Salsa
- 12 oz bag frozen corn
- 2 oz shredded cheddar
German Crumb Cake Pie

Preheat oven to 375 degrees
- 1 1/2 cups flour
- 1 1/4 tsp baking powder
- 1 cup sugar
- 1/8 tsp salt
- 1/4 cup butter
- 1 egg
- 1/2 cup milk
- 1/2 tsp vanilla
Bacon-Jalapeno Taquitos

In a large skillet, cook bacon over medium-high heat until crisp; transfer to a paper towel
- 8 slices bacon (diced)
- 8 oz cream cheese (softened)
- 1 jalapeno (seeded and minced)
- 1 cup shredded Monterey Jack
- 5 green onions (sliced)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- salt and pepper to taste
- 8 6-inch flour tortillas

Prepare pasta as directed to al dente
- 8 oz garden rotini
- 3 oz red onion sliced thin (about a quarter of an onion)
- 3 oz green bell pepper sliced thin (half a pepper)
- 3 oz red bell pepper sliced thin (about half a pepper)
- 5 oz grape or cherry tomatoes (halved)
- 1 cucumber (halved and sliced 1/4" thick)
- 1 cup Italian dressing
- salt & pepper to taste
- fresh shredded Parmesan cheese (optional)
