Emeril's ESSENCE Creole Seasoning (Bayou Blast)

- 2 1/2 TBS paprika

- 1 TBS black pepper

- 1 TBS cayenne pepper
- 1 TBS dried oregano

- 3 TBS olive oil
- 5 oz onion (finely diced)
- 3 oz red bell pepper (finely diced)
- 2 roma tomatoes (seeded, finely diced)
- 2 cloves garlic (minced) or 1 tsp jarred minced garlic
- 1 TBS (15g) tomato paste
- 1/4 tsp paprika
- 1/4 tsp salt

- 3/4 cup orzo
- 3/4 cup (3 oz) yellow onion (finely diced)
- 2 garlic cloves (minced)
- 3/4 cup uncooked white rice
- 3 cups chicken broth
Country Gravy

Heat oil in large skillet over medium heat
- Sausage gravy:
- 1/4 cup vegetable oil
- 1/4 cup all purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 2 cups milk
- 1 lb roll breakfast sausage (cooked and drained)
Cream Corn

In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter
- 2 12 oz packages frozen corn kernels, thawed
- 1 cup heavy cream
- 1 tsp salt
- 2 TBS white sugar
- 1/4 tsp black pepper
- 2 TBS butter
- 1 cup milk
- 2 TBS all-purpose flour
- 1/4 cup freshly grated Parmesan cheese

- 4 chicken breasts (diced)
- 1 pkg Italian Dressing Seasoning
- 8 oz cream cheese
- 2 can cream of chicken soup
- 16 oz rotini pasta
Texas Roadhouse Steak Seasoning

Combine all ingredients in a gallon-sized plastic bag and seal it tightly
- 1 1/2 1 1/2 1/2 TBS coarse kosher salt
- 2 2 2 teaspoons brown sugar
- 1/4 1/4 1/4 teaspoon cornstarch
- 1/4 1/4 1/4 teaspoon garlic powder
- 1/4 1/4 1/4 teaspoon garlic salt
- 1/4 1/4 1/4 teaspoon onion powder
- 1/4 1/4 1/4 teaspoon turmeric
- 1/2 1/2 1/2 teaspoon paprika
- 1/2 1/2 1/2 teaspoon chili powder
- 1 1 1 teaspoon black pepper

- 2 quarts cold water
- 1 ham bone (if available)
