Blackened Cajun Chicken with Farro & Corn

Heat a medium pot of salted water to boiling on high
- 4 Boneless, Skinless Chicken Breasts
- 1 cup Semi-Pearled Farro
- 12 oz bag frozen corn (thawed)
- 2 green onions (sliced - separate greens and whites)
- 1 yellow or orange pepper (diced)
- 2 cloves Garlic (peeled & diced)
- 2 TBS Crème Fraîche (sour cream)
- 1 TBS Hot Sauce
- 1 TBS Apple Cider Vinegar
- 1 TBS cream cheese
- 1 TBS blackened seasoning (Smoked Paprika, Ground Yellow Mustard, Onion Powder, Garlic Powder, Whole Dried Oregano, Whole Dried Thyme, & Cayenne Pepper)
- Olive oil as needed

- 1 oz broccoli florets
- 2 oz cucumber slices
- 2 oz baby carrots
- 1 oz Bolthouse classic ranch
Crawfish Linguine

Melt butter with olive oil in large skillet
- 1/2 cup butter
- 1/4 cup olive oil
- 1 tsp minced garlic
- 1 cup sliced mushrooms
- 1 lb crawfish tails
- 1/2 cup chopped green onions
- 1/4 cup chopped parsley
- 1/3 cup shredded Parmesan cheese
- 1 cup half and half
- salt and pepper to taste
- 8 oz linguine
Tuna Melt

In a medium bowl, combine the mayo, mustard, lemon and Lemon Pepper
- 75g light mayonnaise
- 1 tsp Dijon Mustard
- 1 TBS minced onion (fresh)
- 1/2 TBS Lemon Pepper
- 2 5oz cans tuna (drained)
- 5 slices cheddar
- 5 slices wheat bread
Italian Meatball Soup

Prepare marinara sauce as directed (see recipe)
- Marinara sauce:
- 2 14.5 oz stewed tomatoes
- 1 6oz can tomato paste
- 1 TBS dried parsley
- 2 tsp minced garlic
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp ground black pepper
- 2 TBS olive oil
- 1/2 yellow onion (minced)
- 1/4 cup red wine
- 4 cups chicken broth (or beef) (or water, if no broth available)
- 12 oz frozen mixed veggies
- 8 oz pasta (ditalini)
- 12 frozen meatballs (or 8oz sliced Italian Sausage or chicken)
- 14.5 oz vegetarian broth and garbanzo beans for vegetarian option
- salt & pepper to taste
Lo Mein

Sauce: In a small bowl, combine sauce ingredients
- Sauce:
- 1/4 cup dark soy sauce (brewed)
- 2 TBS light soy sauce
- 2 tsp sesame oil
- 2 tsp sugar
- Noodles:
- 12 oz linguine
- 1 TBS sesame oil
- 6 green onions (sliced - whites and greens separated)
- 2 pkg Bird's Eye Asian Medley)
- 1 can bean sprouts (drained)
- 1/4 cup Mirin

- 10g pistachios (shelled)
- 10g almonds

Goulash (American)

In large stockpot, cook meat until no longer pink
- 1 lb ground beef, turkey,
- 1 onion (diced)
- 1 tsp minced garlic
- 3 cups water
- 2 15oz cans tomato sauce
- 2 15oz cans diced tomatoes
- 3 TBS soy sauce
- 2 TBS oregano
- 2 tsp basil
- 2 bay leaves
- 1 TBS seasoned salt
- 1/2 tsp black pepper
- 16 oz elbow noodles
Tomato Soup (Condensed)

Whisk together all ingredients in small saucepan
- 8 oz tomato sauce
- 1 TBS corn starch
- 1 1/2 TBS brown sugar (or white sugar)
- 1/2 tsp salt
Pork Chops & Stuffing

- OR:
- 4-9 pork chops (3/4 inch thick)
- Salt, black pepper, garlic powder, onion powder (to taste)
- A good helping of leftover cornbread dressing
- 6 oz pkg cornbread stuffing mix
- 10.75 oz can cream of celery soup
- 1 small onion (diced)
- 1 stalk of celery (diced)
