Guacamole

Mash avocados in a medium bowl
- 2 avocados
- 1/2 tsp kosher salt
- 1 TBS fresh lemon juice
- 1/4 cup minced onion (red or white)
- 1 jalapeno (seeded & minced)
- 2 TBS cilantro (finely chopped)
- dash black pepper
- 1 roma tomato (seeded, diced)
Stuffed Shells

In a large skillet, cook beef, onion, and celery until meat is no longer pink
- Sauce:
- 1 lb hamburger meat
- 1 onion (diced)
- 2 ribs celery (diced)
- 1-2 26 oz spaghetti sauce
- 1/4 - 1/2 cup red wine (or water)
- 1 green bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 red bell pepper (diced)
- 2 carrots (peeled and chopped)
- 2 tsp garlic powder
- 2 tsp basil
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp rosemary
- Shells:
- 12 oz box jumbo shells (2-4 shells per person)
- 8 oz block mozzarella cheese (cubed to fit in shells)
- 2-3 cups Italian blend shredded cheese
Wolf Chili

Heat 1 teaspoon shortening in cooking pot
- 2 lbs chili grind or small cubed chuck (or turkey)
- 15 oz beef broth
- 8 oz. can tomato sauce
- 2 ½ tsp onion powder
- 2 tsp garlic powder
- 1 tsp beef bouillon
- 1 cup water
- 3 tsp ground cumin
- ¼ tsp white pepper
- ½ tsp cayenne pepper
- ½ tsp salt
- ½ tsp season All
- 2 TBS Mexican hot chili powder
- 2 TBS McCormick Texas-style chili powder
- 2 tsp paprika
- 2 TBS chili powder
Chili con Carne

Cook meat in stockpot with onion until meat is no longer pink
- 1 TBS vegetable oil
- 1 lb ground turkey (or beef)
- 1 large onion (diced)
- 2 garlic cloves (diced)
- 1 TBS chili powder
- 1 tsp salt
- 1 tsp cumin
- 1 tsp dried oregano
- 3 15oz cans light kidney beans (rinsed and drained)
- 2 29oz cans petite diced tomatoes
- 4 cups chicken stock
- 1-2 tsp Tabasco (or other pepper sauce)
- 3 Hershey Special Dark miniatures
Turkey Burgers

In medium bowl, gently mix together turkey, garlic, paprika, and cumin
- 1 pound ground turkey (85/15)
- 1/2 tsp garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground cumin
Baked Beans

Preheat oven to 350 degrees
- 2 15oz cans pork and beans
- 1/2 medium yellow onion chopped
- 1 TBS brown sugar
- 2 TBS pancake syrup
- 1 TBS yellow mustard
- 1 TBS Worcestershire sauce
- 1 tsp salt
- 1 tsp pepper
- splash of red wine vinegar
- 2 slices of bacon cut in half
Beefaroni

Brown meat in large skillet
- 1 lb ground beef (or turkey)
- 29 oz can tomato sauce
- 1/2 cup grated Parmesan cheese
- 1/4 cup water
- 1 TBS sugar
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp Italian seasoning
- 1/4 tsp black pepper
- 16 oz ziti or penne pasta
Shrimp Fettuccine Alfredo

In large stockpot, prepare noodles as directed
- Sauce:
- 12 oz Fettuccine
- 2 TBS olive oil
- 1 lb raw shrimp (peeled, deveined)
- 2 tsp Cajun seasoning
- 4 TBS unsalted butter
- 8 oz Cream Cheese (or Greek Cream Cheese, or Neufchatel)
- 1 1/2 cups shredded Parmesan
- 1 1/2 cups milk (or almond milk, coconut milk)
- 1 tsp garlic salt

- 1 pkg Lil' Smokies
- 15 average sized jalapenos
- 8 oz cream cheese, softened
- 1 lb bacon
"KFC" Fried Chicken

- 1 tsp chili powder
- 1 tsp dried sage
- 1 tsp dried basil
- 1 tsp dried marjoram
- 1 tsp black pepper
- 1 tsp oregano
- 1 tsp garlic powder
- 2 tsp salt
- 2 TBS onion powder
- 1 TBS paprika or annato
- 1 tsp dried thyme
- 1 cup flour
- 1 tsp baking powder
- 3 lbs chicken
- 1 cup buttermilk
- 1 egg
- oil for frying
