Preheat oven to 400 degrees
- 1 lb ground beef (or ground turkey or veggie crumbles)
- 1 onion (diced)
- 10 oz Rotel tomatoes
- 15 oz black beans (rinsed and drained)
- 1/4 cup Italian dressing
- 2 TBS taco seasoning
- 1/4 tsp group cumin
- 6 flour tortillas (8 inches)
- 1/2 cup cheddar cheese (shredded)
- 1/2 cup monterey jack cheese (shredded)
Jambalaya

Combine shrimp, chicken and Essence in a bowl and toss to coat evenly
- 1 lb medium shrimp (peeled & deveined)
- 1 lb chicken thighs (boneless, skinless, diced)
- 2 TBS Emeril's Original Essence (Bayou Blast)
- 1/2 cup olive oil
- 1 cup chopped onions*
- 1 cup chopped green bell peppers*
- 1 cup chopped celery*
- Or 2 12 oz bags mirepoix
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 garlic cloves (chopped)
- 14 oz can petite diced tomatoes
- 4 bay leaves (calls for 6, but I thought it was too strong)
- 1 oz Worcestershire sauce
- 1 oz Louisiana hot sauce
- 3 cups long grain rice
- 7 cups chicken stock
- 14-16 oz Andouille sausage (sliced)
Texas Roadhouse Steak Seasoning

Combine all ingredients in a medium bowl
- 1.5 TBS coarse kosher salt
- 2 tsp brown sugar
- 1/4 tsp cornstarch
- 1/4 tsp garlic powder
- 1/4 tsp garlic salt
- 1/4 tsp onion powder
- 1/4 tsp turmeric
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1 tsp black pepper

- 2 TBS butter
- 1 lb asparagus (bottoms trimmed)
- Kosher Salt & Pepper to taste
- Other spices (if wanted)
- 1/3 cup sliced almonds (optional)
- 1/3 Parmesan cheese (optional)
Tuscan Pork Roast

Butter the inside of a slow cooker or roast pan
- 4 slices of bacon (cut into 1-inch pieces)
- 2-3 lb pork roast
- 2 tsp minced garlic
- 1 tsp dried rosemary
- 1/2 tsp ground sage
- 1/2 tsp salt
- 1/3 cup white wine
- 3 TBS all purpose flour
- 3 TBS water

- 9 cups All-Purpose Flour
- 2 pkg (4 1/2 tsp) Active Dry Yeast

- 1 tsp (scant) Baking Soda

- 1 medium onion (diced)
- 1 jalapeno (seeded and diced)
