Pasta with fresh tomato sauce

Heat oil in large skillet over medium heat and saute garlic, onions, and mushrooms until lightly browned
- 1/4 cup olive oil
- 4 cloves whole peeled garlic - minced
- 8 fresh mushrooms - sliced
- 1/2 large yellow onion - chopped
- 3 large tomatoes - cored, seeded and chopped
- 1/2 tsp drained oregano - crushed
- 2 Tbsp fresh basil - chopped
- Pinch red pepper flakes
- salt and pepper to taste
- 1/2 cup red wine - burgundy or cabernet
- 1 pound pasta - cooked and drained
- Grated Parmesan cheese
Lemon Meringue Pie

Prepare pastry shell. Separate eggs and set whites aside for meringue
- Meringue:
- 1 baked pastry shell
- 3 egg yolks
- 1 1/2 cup sugar
- 3 Tbsp flour
- 1 1/2 cup water
- 2 Tbsp Margarine or butter
- 1/2 tsp finely shredded lemon peel
- 1/3 cup lemon juice
- 3 Tbsp cornstarch
- 3 egg whites (at room temp.)

- 1/2 pound cop-smoked bacon

- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup of loosely packed fresh basil leaves, stemmed, finely chopped
- 2 Tbsp chives, finely chopped
- 1 large clove of garlic finely minced
- Fine sea salt
- Freshly ground black pepper
