Coffee Angel Food Cake
- For the cake:
- Ingredients
- 1 cup cold water plus 1 tablespoon
- 3 tablespoons Mexican coffee flavored liqueur (recommended: Kahlua)
- 1 tablespoon instant coffee (recommended: Folgers)
- 1 (16-ounce) box angel food cake mix (recommended: Betty Crocker)
- 2 tablespoons cocoa powder (recommended: Hershey's)
- For the icing:
- 1 (1-pound) box powdered sugar, sifted (recommended: C and H)
- 1/4 cup milk
- 2 tablespoons orange liqueur
- For garnish:
- 1 orange, zested

French Onion Dipped Sammies
- 1 head of garlic
- 2 tbs evoo
- 2 tbs butter
- 2 large onions sliced thin
- 1 bay leaf
- 1 tsp ground thyme
- salt and pepper
- 2 cups of beef broth
- 2 lbs. thin sliced deli roast beef
- 4 onion rolls split open
- Swiss cheese (optional)
Risotto-Asparagus and Lemon Risotto

1. Combine first 4 ingredients in a 2-quart microwave-safe glass bowl
- 3/4 cup chopped onion $
- 2 tablespoons butter $
- 1 tablespoon olive oil $

- 1 cup uncooked Arborio rice or other medium-grain rice
- 3 cups unsalted chicken stock
- 1/3 cup dry white wine $
- 1 pound asparagus, trimmed and cut into 1/2-inch pieces
- 1/2 teaspoon grated lemon rind
- 1 1/2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 ounces shaved Parmigiano-Reggiano cheese (1/3 cup), divided

Preheat oven to 350°. Stir (by hand) dry cake mix, oil and eggs in a large bowl until dough forms
- 1 (11 1/2 ounce) box devil's food cake mix (Betty Crocker Super Moist suggested)
- 1/2 cup vegetable oil
- 1 1/4 large eggs
- 3/4 to taste confectioners' sugar or granulated sugar, for rolling

- 2 1/2 cups cold milk
- 2 (3.5 ounce) packages instant vanilla pudding mix 2 cups frozen whipped topping, thawed
Pasta-Chicken in a Fresh Tomato and Eggplant Sauce with Spaghetti

Spaghetti with chicken and eggplant in fresh tomato wine sauce
- 1 pound spaghetti
- 5 tbs evoo
- 3 baby eggplant or 1 small firm eggplant cut into 1/2 inch dice
- 1 1/3 pounds chicken tenders cut into small bite sized pieces
- 1 medium yellow onion chopped
- 4 cloves of garlic chopped
- coarse black pepper
- 1/2 tsp crushed red pepper flakes
- 1/2 cup dry white wine
- 1 1/2 cups chicken broth or stock
- 1 pint red cherry or grape tomatoes
- 1 cup fresh flat leaf parsley, chopped
- 1 cup parmigiano reggiano cheese
- 1/2 cup starchy cooking water(from boiling pasta)
Coconut Cream Pie I

Directions In a large bowl, combine the pudding mix and milk until the pudding mixture thickens

- 1 (9 inch) pie shell, baked
- 1 (5 ounce) package instant vanilla pudding mix
- 1 1/2 cups milk
- 1 1/2 cups flaked coconut
- 1 (8 ounce) container frozen whipped topping, thawed
Soup-Stuffed Pepper Soup

In a large pot, brown and crumble beef along with diced green peppers and onion over medium high heat
- 1 pound Ground Beef
- 1 small onion diced
- 1 large bell pepper diced
- 1 can (29 oz) diced tomatoes
- 1 (10 oz) can tomato sauce
- 1 (14 oz) can chicken or beef broth (she used beef)
- 2 cups cooked rice
- 1 tbs sugar
- 1 tsp garlic powder
- Salt and pepper to taste
- Shredded cheddar cheese for topping (optional-I will probably use grated cheese
Low fat 7 minute frosting. (Citrus, coffee or peppermint)
