Creamy Scalloped Potatoes -- (from Betty Crocker's Cookbook)

Cut potatoes into thin slices to measure about 4 cups
- 2 lbs potatoes (about 6 medium)
- 3 tbsp margarine or butter
- 3 tbsp flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 1/2 c milk
- 1 onion, finely chopped
- 1 tbsp margarine or butter

Saute corn and onion in the butter
- 4 Cups fresh corn kernels
- 1/2 Cup chopped onion
- 2 Tablespoons butter
- 2 Tablespoons flour
- 2 Cups chicken broth
- 2 Cups milk or cream
- 1 can creamed corn
- 1 Cup cheddar cheese
- 1 Can chopped green chiles
- 1/2 Cup crumpled crisp bacon

Preheat the oven to 400 degrees F
- 2 pounds sweet potatoes, whole and unpeeled
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 lemon, zested
- 2/3 cup whole blanched almonds, ground in food processor
- 1 teaspoon ground cinnamon
- 1/2 teaspoon anise extract
- 1 tablespoon Grand Marnier or Cointreau
- 4 sheets frozen puff pastry, thawed
- 1 egg, beaten
- Powdered sugar for dusting

- 1 ⁄2 cup butter softened
- 1 ⁄2 cup sugar
- 3 eggs
- 2 1⁄2 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 2 ⁄3 cup finely crushed peppermint candy canes
- 1 (14-ounce) package almond bark
- 2 drops red or pink food color
- 1 ⁄4 teaspoon peppermint extract

Country Broiled Chicken

Place chicken, skin sides down, on rack in broiler pan
- 2 1/2 pound chicken, cut-up
- 1/2 cup butter
- 1/4 cup vegetable oil
- 2 tablespoon lemon juice
- 2 teaspoons salt
- 2 teaspoons sugar
- 1/2 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1 small onion, finely chopped (1/4 cup)
- 1 medium garlic clove, crushed

Pound the beef cutlets and stretch them and make very thin
- 8 boneless beef cut thin flank steak, boneless sirloin or flank steak
- 8 very thin pieces of savory baked ham or pancetta for the soffritto
- 1/3 cup finely chopped flat leaf parsley
- 2 garlic cloves, minced with the Italian parsley
- 1 heaping tablespoon rinsed and drained capers
- 3 ounces Romano cheese
- 1/4 cup extra virgin olive oil
- 1 medium yellow onion, chopped
- 2 garlic cloves, chopped with the onion more or less can be used depending on taste
- freshly ground pepper to taste
- capers optional
- finely chopped Italian parsley for garnish

- 1 bunch cilantro, washed
- 1/4 cup canned jalapenos with a little juice
- 1/2 cup buttermilk ( I added lemon juice to regular milk)
- 3 cloves garlic
- 1 cup tomatillo sauce (salsa verde)
- 2 c sour cream
- 2 c mayonnaise
- 2 Tbsp dried parsley
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried basil
- 1/2 tsp pepper
