Position a rack in the center of an oven and preheat to 350º F
- 1 Tbs. olive oil
- 1 yellow onion, chopped
- 2 celery stalks, finely chopped
- 1 garlic clove, minced
- 3 or 4 slices white bread
- 1/4 cup milk
- 1 lb. ground beef chuck
- 1/2 lb. ground pork shoulder or butt
- 1/2 lb. ground veal shoulder or leg
- 8 oz. tomato sauce
- 1 egg, lightly beaten
- Salt and freshly ground pepper, to taste
- 1/4 cup ketchup

In a small bowl dissolve yeast in warm water
- 2 ENVELOPES yeast, active dry
- 1/4 cup water lukewarm
- 1 tablespoon sugar
- 1 can evaporated milk with enough water to make 2 cups
- 3/4 cup butter
- 3/4 cup sugar
- 2 teaspoons salt
- 4 each egg yolks plus one whole egg, slightly beaten
- 1 teaspoon lemon zest grated
- 6 1/4 cups flour, all-purpose sifted
- 1 x butter softened, as needed
- --- Topping
- 1 cup flour, all-purpose
- 1/2 cup sugar
- 1/4 cup butter or margarine

Clean and remove flowerets from broccoli, cut tender stalks into small pieces
- 1 1/2 pounds broccoli
- 2 cups chicken broth
- 1 large stalk celery, chopped (about 3/4 cup)
- 1 meduim onion, chopped (1/2 cup)
- 2 tablespoons butter
- 2 tablespoons flour
- 3/4 teaspoon salt
- pepper to taste, dash of ground nutmeg
- 1/2 cup whipping cream

1-Stir together all ingredients in a small bowl until smooth
- 1 1/2 cups mayonnaise
- 1/4 cup Grey Poupon mustard (no substitute)
- 1/2 cup honey
Sesame Brown Rice

1.Soak 1 cup of brown rice for 1 hour and drain
- 2 3/4 cups water
- 1 cup medium-grain brown rice
- 1/2 tsp. kosher salt
- 2 tsp. sesame seeds
- 1 tsp. Asian sesame oil
- 1 Tbs. thinly sliced green onions
- 1 Tbs. fresh ginger, grated (optional)
Shrimp in Pumpkin Seed Sauce

Remove shells and heads from shrimp
- 1 1/2 pounds medium shrimp, unshelled, preferably with heads on
- 2 1/2 cups water
- 1 teaspoon salt
- 1 cup hulled raw pumpkin seeds
- 1 small bunch cilantro, chopped, stems discarded
- 4 serrano chiles, stemmed, and chopped
- 1/2 small white onion, chopped
- 1 tablespoon unsalted butter
- 2/3 cup thick sour cream
- 12 corn tortillas
- 2 limes, quartered
