Strawberry Cobbler

1.Preheat oven to 400 degrees F (205 degrees C)
- 1/2 cup white sugar
- 1 tablespoon cornstarch
- 1 cup water
- 3 cups strawberries, hulled
- 2 tablespoons butter, diced
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 tablespoons butter
- 1/2 cup heavy whipping cream
Texas White Chili

Combine beans, stock, and half the onion, garlic, and salt in a large kettle and bring to a boil
- 1 pound dried white beans
- 1 1/2 quarts chicken broth
- 1 1/2 medium onions -- chopped
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 4-oz can green chilies -- chopped
- 2 teaspoons cumin
- 2 teaspoons ground oregano
- pinch cayenne, ground coriander, ground cloves
- 4 boned and skinned chicken breast halves -- cooked
- 1/2 cup monterey jack cheese -- grated
- 4 green onion -- thinly sliced
- optional: ripe olives, corn, pimento
Mrs. Turner's Squash Skillet

Saute onion and green pepper in butter
- 1/2 cup Onion -- chopped
- 1/2 cup Pepper, Bell -- chopped
- 2 cup Squash, Patty Pan -- cubed
- 2 med Tomatoes -- quartered or smaller
- 2 tbsp Butter
- 1 teaspoon Sugar
- 1/4 tsp Pepper, Black
- 1 tsp Salt
- 1 tsp Flour, Plain
- 2-3 tablespoon grated cheese, optional

Cook meat, onion, mushrooms, and garlic until meat is browned
- 1 pound lean ground beef
- 1 cup onion -- chopped
- 1 cup fresh mushrooms
- 1 clove garlic -- minced
- 2 tablespoons parsley -- snipped
- 1/2 teaspoon dill weed
- 3/4 cup beef broth
- 1/2 cup dry red wine
- 1/4 cup catsup
- 1 cup sour cream
- 1 tablespoon flour
- 1/2 cup Parmesan cheese -- grated
- 1 8-oz pkg medium noodles -- cooked and drained
Honey Thyme Pot Roast with Red Wine

Preheat the oven to 350 degrees F
- 1 bottom round roast, about 4 pounds
- Salt and freshly ground black pepper
- 5 tablespoons vegetable oil
- 3 small onions, medium diced
- 1 head garlic (about 10 to 12 cloves), lightly smashed
- 1 pound carrots (about 4 medium), cut roughly into 1 1/2-inch pieces
- 2 cups low-sodium chicken, beef, or vegetable broth
- 2 cups medium-bodied red wine
- 2 1/2 tablespoons honey
- 5 to 6 sprigs fresh thyme
- 2 pounds russet potatoes, peeled and cut into 1 1/2 to 2-inch cubes

Roasted Tomatillo Salsa Verde with Avocado

- ■2 1/2 lbs. tomatillos, husked and rinsed
- ■2 large onions
- ■10 cloves garlic
- ■4 jalapenos
- ■2 Tb. vegetable oil
- ■4 tsp. ground cumin
- ■2 tsp. salt
- ■1 cup packed cilantro
- ■3 avocados
- ■1 lime (optional)

- 1/2 cup finely chopped sweet onion
- 1/2 cup finely chopped
- jalapeño (you can use canned green chiles if you prefer; just add them with the tomatoes)
