Braised Beef and Mushrooms,known as fricandó in Spain

n a saucepan over high heat, bring the stock to a boil and add the mushrooms
- Ingredients:
- 3 3 3 cups beef stock
- 1 1 1 oz. dried moixernon or mousseron or chanterelle
- mushrooms
- 4 4 2 lb. beef chuck roast, sliced 2 inches thick
- to and freshly ground pepper, to taste
- 1 1 1⁄4 1⁄4 cups all-purpose flour
- 1 1⁄4 1⁄4 cup olive oil
- 2 2 1⁄4 yellow onions, sliced 1⁄4 inch thick
- 3 3 3 garlic cloves, crushed
- 1 1 1 cup dry white wine
- 1 1⁄2 1⁄2 cup drained diced canned tomatoes
- 1 1 1 oz. bittersweet chocolate, chopped
- 2 2 2 sprigs each fresh thyme, rosemary and
- oregano, tied with string
Sugar and Spice Pecans

Combine sugar, spices, and salt; set aside
- 1 cup sugar
- 1 tablespoon ground cinnamon
- 2 teaspoons ground nutmeg
- 1/2 teaspoon salt
- 2 egg whites -- at room temperature
- 3 tablespoons water

In a saucepan, cook spinach in a small amount of water for 2-3 minutes; drain thoroughly
- 1 (10 ounce) package frozen chopped spinach
- 5 tablespoons butter or margarine, divided
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup shredded Cheddar cheese
- 2 eggs, beaten
- 1/2 cup milk
- 1/2 cup soft bread crumbs

- 1/4 cup pine nuts

- 1 lb red cabbage, cut into 1/4-inch-thick slices
- 1 (5-oz) bag baby spinach, any tough stems discarded

- 1/2 cup All-purpose flour
- 4 cups Milk
- 1 1/2 cups finely chopped fully cooked smoked ham
