Roasted Asparagus-Orange Salad

very good & very pretty - would be nice for the holidays
- 2 lbs. green, white, and/or purple asparagus, trimmed
- 1 T olive oil
- 1/4 t salt
- 2 oranges
- 2 T olive oil
- 1 T cider vinegar
- 1 clove garlic, minced
- 1 t Dijon mustard
- 1/2 t fennel seeds, crushed
Creamy Shrimp & Tomato Chowder

This was amazing
- 2 stalks celery, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1 Tbsp. olive oil
- 2 14.5 oz. cans diced tomatoes with basil, garlic, and oregano, undrained
- 1 lb. medium peeled cooked shrimp
- 1/2 cup whipping cream
- 1/2 cup water
- Ground Black Pepper
- Slivered fresh basil
Olive Cheese Ball

- 1 8-ounce package cream cheese
- 8 ounces blue cheese, crumbled
- 1/4 cup butter or margarine, softened
- 2/3 cup chopped pitted ripe olives, well drained (one 4-1/2-ounce can)
- 2 tablespoons snipped fresh chives
- 1/3 cup coarsely chopped walnuts or almonds, toasted
- Fresh parsley (optional)
- Assorted crackers or apple slices
Healthy Green Bean Casserole

A healthy real-food take on the classic… without the cream of mystery ingredients soup! haven't tried this yet
- ONION TOPPING:
- 2 to 3 medium onions, very thinly sliced
- 2 eggs
- 3 tablespoons of heavy cream or coconut milk
- 2 to 3 tablespoons of coconut flour
- 1/2 cup coconut oil or tallow for frying (I use tallow)
- CREAM OF MUSHROOM SAUCE:
- 1/2 cup butter
- 1/2 cup cream or coconut milk
- 1/3 of onion mix above
- 8 to 10 mushrooms, finely diced
- 1/2 teaspoons garlic powder
- Salt and pepper to taste
- 4-5 egg yolks
- coconut milk or water to thin
- 5 cans of cut or french style green beans
Caesar Vinaigrette

Stir the white wine vinegar, dijon mustard, balsamic vinegar, lemon zest, honey, oregano, salt, and pepper together...
- 2 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp balsamic vinegar
- 1 tsp lemon zest
- 1 tsp honey
- 1/2 tsp Oregano
- 2/3 cup olive oil
- 1 clove garlic, minced
- 1/2 cup shredded Parmesan cheese (fresh is best)
- Salt and pepper to taste
Herbed Prime Rib with Two Sauces

- 1 tablespoon dry mustard
- 1 1/2 teaspoons instant espresso coffee powder
- 1 1/4 teaspoons coarsely ground black pepper

- 1/2 teaspoon dried thyme, crushed
- 1/2 teaspoon dried oregano, crushed

Raw Lavendar Walnut Coconut Fudge

- ◦ 1 Tbsp organic Vanilla extract
- ◦ 1 Tbsp organic maple syrup
- Fudge:
- ◦1 cup walnut/lavender pulp (from your walnut milk!)
- ◦1/2 cup organic roasted cacao powder or ground raw cacao beans
- ◦1 cup organic unrefined liquid coconut oil
- ◦3 Tblsp organic maple syrup
- ◦2 tsp organic vanilla extract

- 1 lb boneless chuck roast, trimmed & cut into 1-inch pieces
- 3/4 teaspoon salt, divided
- 2 tablespoons canola oil
- 4 cups chopped onion (about 2 medium)
- 1/4 cup minced jalapeno peppers (about 2 large)
- 10 garlic cloves, minced
- 1 (12 oz.) bottle beer
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 2 tablespoons tomato paste
- 3 cups fat-free, less-sodium beef broth
- 1 (28 oz.) can whole peeled tomatoes, drained & chopped
- 1 (15 oz.) can pinto beans, rinsed & drained
- 1/2 cup thinly sliced radish
- 1 avocado, chopped
- 6 tablespoons small cilantro leaves
- 6 tablespoons sour cream
- 6 lime wedges
Paleo Jambalaya

- 1 lb. sausage (I used a spicy pepper sausage from Trader Joe's)
- Olive oil... about 1/4 C (or less)
- 1 small yellow onion, chopped
- 1 green bell pepper, chopped
- 2-3 cloves garlic
- 1 14.5 oz. can diced tomatoes, undrained, low sodium
- 1.5 C low sodium chicken broth
- 1 tsp. dried thyme
- 1-2 T fresh parsley, chopped
- 1 large head of cauliflower
- 2 C shelled, deveined and cleaned shrimp (I got a 16oz bag at Trader Joe's)
- some fresh ground pepper to taste
