Salmon with Garlic and Dill

- 1-1/2 * 1-1/2 lb. salmon fillet
- 1/2 * 1/2 tsp. salt
- 1/8 * 1/8 tsp. white pepper
- 4 * 4 cloves garlic, minced
- 1 * 1 sprig fresh dill, minced
- 6 * 6 slices lemon
- 2 * 2 green onions, chopped
Roasted Kale & Red Onions

- 3 large red onions, cut in wedges
- 6 tablespoons olive oil, divided
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup chicken broth
- 3 tablespoons balsamic vinegar

- 2 pound bunches (about 1-1/4 pounds) kale, stems removed coarsely chopped

Grilled Rosemary Chicken

- 1 teaspoon finely shredded lime peel
- 1/2 cup lime juice
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 2 clovesgarlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
Sweet Potato Fries

- Sweet Potatoes - peeled & cut into fry shapes (cut whole potato in slices lenghtwise then stack & cut again - gives you pretty even slices)
- Melted Butter
- Olive Oil
- Salt
- Pepper
- Season Salt
- Fresh Chopped Parsley
- All ingredients are to taste & using your own discretion - it is actually a very simple recipe - I just wanted to add it to my recipes so I don't forget about it.

Peach Macaroon Cobbler

Pan-Seared Shrimp Salad with Mango-Lime Dressing

- 1/3 cup olive oil
- 3 T lemon juice
- 1 T Old Bay seasoning
- 1 T bottled cocktail sauce
- 1/4 t garlic powder
- 1 medium mango, halved, seeded, peeled, & cut up
- 2 T honey
- 2 T water
- 1 T lime juice
- 1 T red wine vinegar
- 1/2 t poppy seeds
- 1 - 8 oz. pkg. salad greens
- 1 cup pecan halves and/or chopped pecans, toasted
- 1/3 cup thinly sliced red onion
Blackened Portobello-Mushroom Salad

- 1/4 cup red wine vinegar
- 1/4 cup balsamic vinegar
- 1/4 cup tomato juice
- 1 tablespoon olive oil
- 2 teaspoons Dijon mustard
- 2 teaspoons stone-ground mustard
- 1/4 teaspoon coarsely ground pepper
- 4 (4-ounce) portobello mushroom caps (about 5 inches wide)
- 1 tablespoon Cajun seasoning for steak (such as Chef Paul Prudhomme's Steak Magic)
- 2 teaspoons olive oil
- Cooking spray
- 16 cups gourmet salad greens
- 1 large tomato, cut into 8 wedges
- 1/2 cup thinly sliced red onion, separated into rings
- 1 (15-ounce) can cannellini or other white beans, rinsed and drained
- 1/4 cup (1 ounce) crumbled blue cheese

- 4 ounces Gruyere cheese, shredded (1 cup)
- 1 cup mayonnaise
- 1 4 ounce jar diced pimientos, drained (or 2 2-oz jars)
- 1/2 cup finely chopped green sweet pepper
- 1/3 cup finely chopped onion
- 1 small jalapeno pepper, stemmed, seeded, and minced*
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon cayenne pepper
- Optional Stir-ins: crumbled crisp-cooked bacon, toasted pecans, chopped green onions, or diced tomatoes
- Dippers: celery sticks, carrot sticks, pita chips, and/or crackers
