Green Green Spring Vegetables

very yummy and very green :)
- 1/4 pound French string beans (haricot verts), ends removed
- Kosher salt
- 1/4 pound sugar snap peas, ends and strings removed
- 1/4 pound asparagus, ends removed
- 1/2 pound broccolini, ends removed
- 2 tablespoons unsalted butter
- 1 tablespoon good olive oil
- 3 large shallots, sliced
- 1 / teaspoon freshly ground black pepper
Paleo Coconut Secret Bars/Healthy Mounds

If you like Mounds Bars or Almond Joy you have to try these! A much healthier version and just as good, even better
- FILLING:
- 4 4 4 cups unsweetened coconut, grated
- 1/2 1/2 16 cup softened or melted coconut oil (Trader Joe’s sells 16 ounce organic for $5.99)
- 3 1/2 3 1/2 1/2 tablespoons coconut nectar (I liked this best, however you could use real maple syrup, honey, or agave)
- Roasted whole or slivered almonds (optional)
- COATING:
- 1 1 1 tablespoon coconut oil
Spicy Coconut Pork Chops

- Seasoning:
- 8 pork chops
- 2 T coconut oil
- 1 yellow onion, sliced
- 1/2 C coconut milk
- 2 T lime juice
- 1 tsp. olive oil
- 1/2 C unsweetened, shredded coconut
- 1/2 tsp. oregano
- 1/4 tsp. ginger
- 1/4 tsp. red chili flakes
- 1/4 tsp. turmeric
- 1/4 tsp. black pepper
- 1/8 tsp. cayenne pepper
- pinch sea salt
Baked Chicken Topped with Crispy Prosciutto

This was sooooo goooodddd :) YUM!!
- 4 Skinless, boneless Chicken breasts, pounded
- 2 Shallots, thinly sliced
- 1 C Mushrooms, sliced
- 1/2 C Artichoke hearts
- 1/2 C White wine or chicken broth
- 1 T Olive Oil
- 2 oz. Prosciutto
- Seasonings: sea salt, black pepper, garlic powder and paprika
- Spinach
- 2 T chopped garlic
Fish Burgers

These were really tasty but very dry & they didn't stick together like burgers
- 240 g drained canned tuna
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped red bell pepper
- 1 egg, lightly beaten
- 1/4 cup finely chopped celery
- 1 teaspoon chopped fresh dill
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- additional ingredients to make patties stick together??
Healthy Homemade Chocolate Butter

Stuffed Turkey Tenderloins

- 2 8 ounces turkey breast tenderloins
- 2 cups chopped fresh spinach leaves
- 3 ounces semisoft goat cheese (chevre) or feta cheese,crumbled(about 3/4 cup)
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/8 - 1/4 teaspoon ground red pepper
Chops and Pineapple with Chili Slaw

- 8 1/2 inch cuts boneless top loin pork chops (1-1/2 lb. total)
- 1 1/2 teaspoons chili powder
- 1/2 of a cored fresh pineapple, sliced
- 3 tablespoons cider vinegar
- 2 tablespoons orange juice
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 1/3 of a small green cabbage, cored and sliced (about 5 cups)
- 1/2 red onion, thinly sliced
- 1 small red sweet pepper, cut in strips
Burger with the Garden

This was very good. I did use a bun but no traditional condiments - just the buns toasted with some of the dressin...
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 1 tsp. snipped fresh thyme
- 1/4 tsp. cracked black pepper
- 1 pound 90% lean ground beef
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 medium yellow summer squash, cut lengthwise into 1/4- to 1/2-inch thick slices
- 2 to 4 oz. blue cheese, cut in wedges
- 4 hamburger buns, split and toasted
- Arugula or lettuce
- Tomato slices (optional)
- Red onion slices (optional)
- Pickle slices (optional)
Grilled Vegetable Salad with Garlic Dressing

This was really good & easy
- 2 red and/or yellow sweet peppers
- 2 Japanese eggplants, halved lengthwise
- 2 medium zucchini or yellow summer squash, halved lengthwise, or 8 to 10 yellow sunburst or pattypan squash*
- 1 tablespoon olive oil
- 2 cups dried tortiglioni or rigatoni
- 3 tablespoons balsamic vinegar or red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 teaspoon bottled roasted minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup cubed fontina cheese (3 ounces)
- 1 to 2 tablespoons snipped fresh Italian parsley or parsley
