  • 1/2 1/2 16 cup softened or melted coconut oil (Trader Joe’s sells 16 ounce organic for $5.99)
  • 3 1/2 3 1/2 1/2 tablespoons coconut nectar (I liked this best, however you could use real maple syrup, honey, or agave)
  • Roasted whole or slivered almonds (optional)
  • COATING:
  • 1 1 1 tablespoon coconut oil

  • 4 Skinless, boneless Chicken breasts, pounded
  • 2 Shallots, thinly sliced
  • 1 C Mushrooms, sliced
  • 1/2 C Artichoke hearts
  • 1/2 C White wine or chicken broth
  • 1 T Olive Oil
  • 2 oz. Prosciutto
  • Seasonings: sea salt, black pepper, garlic powder and paprika
  • Spinach
  • 2 T chopped garlic
